There are a several things that mean summer has really arrived for me. Going to the lake, going to the beach and going to the pool are three of my favorites. Then there are summer foods like watermelon, corn and peaches. And don't forget summer treats! I grew up near the beach and something fresh, fruity and frozen on a hot day at the beach is a must have. These Mango Strawberry Daiquiri Pops are popsicles for grown ups. They make me feel like I am on a cruise to some tropical place. But I'm not. That would be Carole who gets to go on cruises much more often than I do and I am jealous! I am going to have to console myself with this tasty tropical treat.

This recipe was inspired from two sources. The first is a frozen pie that was on the cover of Woman's Day Magazine in July of 1995. I was eight months pregnant with my first baby at the time. Our apartment didn't have air conditioning, but we did have a swamp cooler, which is just a step above a humidifier if you ask me. It was HOT! I loved the dessert because it was so refreshing. I hadn't thought about this recipe in years, but when I saw this post for layered ice cream pops it gave me an idea. I thought, "Wouldn't that pie make a great handheld treat?" Well, I can tell you, yes it does!

I used paper cups as a mold. It is so fun tearing them off. It is like your pop is a wrapped present. Enjoy!

Mango Strawberry Daiquiri Pops

1. Let sorbet and frozen yogurt soften about 20 minutes. Reserve 1/4 cup frozen-daiquiri mixer. Swirl the remaining mixer with frozen yogurt creating a marbling effect. Mash strawberries and combine with reserved 1/4 cup frozen-daiquiri mixer.

2. In 5 ounce paper cup, layer 1/3 mango sorbet, 1/3 strawberry mixture and 1/3 frozen yogurt mixture. Insert popsicle stick. Freeze for 2 to 4 hours until firm.
