Mangoes are one of my all time favorite fruits. I get excited whenever they start appearing at the grocery stores come spring and summer. It is hard for me to walk past the isle without picking up at least one or two of these juicy fruits. They are delicious simply sliced and eaten on its own or used in salads. This tasty Mango and Turkey Salad and sweet juicy Mango Salsa are two dishes I make throughout the warmer months.

Sometimes I blend the flesh and use the puree in cakes and bakes as they impart such a lovely flavor. Do check out this moist Mango Cake with Cream Cheese Frosting and these pretty Mango Egg Tarts. They make delightfully tea time treats for your guests or for your own pleasure. Your family and friends will surely thank you for them.

Since I am so much into smoothies these days, it is inevitable that one or two of these juicy fruits end up in a glass. The mango can stand on its own with just a dash of milk but I chose to add a little ginger to give it extra zing! I also added a pinch of salt to further enhance its flavor.

Any kind of milk would work with this smoothie – regular milk, almond, coconut, flax, or soy. Plain or vanilla yogurt would work too for an even creamier smoothie. I chose to use flax milk because that was what I had in the refrigerator. Flax milk is cold pressed flax seed oil mixed with water. It is very rich and creamy with almost no after taste. The lightly sweetened flax milk actually combined very well with the mango. This Mango Ginger Smoothie was thick, creamy, and very delicious. I highly recommend it.

Combine mango, ginger, flax milk, and salt in a blender. Blend until smooth. Remove and serve immediately.2.2
