%3C/p%3E%3Cp%3EWell%20I'd%20been%20dreading%20today's%20date%20since%20past%20two%20months%20as%20today%20was%20my%20baby's%20vaccination%20day!!!%3C/p%3E%3Cp%3EI%20thought%20he%20would%20be%20crying%20the%20whole%20time%20and%20may%20get%20a%20fever%20like%20last%20time,%20but%20he%20totally%20surprised%20me%20when%20he%20cried%20just%20for%202mins%20after%20the%20shots%20and%20was%20back%20to%20his%20happy%20bubbly%20self%20again.%20He%20amazes%20me%20everyday!!%20:-)%20So%20its%20a%20Happy%20Children's%20Day%20afterall....%3C/p%3E%3Cp%3ENow%20coming%20to%20this%20post%20,%20I%20made%20this%20cake%20sometime%20back%20for%20a%20potluck%20at%20a%20friends%20house%20and%20it%20was%20the%20first%20time%20I%20tried%20baking%20a%20sponge%20cake!%3C/p%3E%3Cp%3EFinally%20I%20got%20a%20good%20recipe%20and%20idea%20from%20my%20friend%20Ria's%20blog%20and%20it%20was%20simple%20and%20very%20easy.%20It%20came%20out%20really%20well%20and%20looked%20beautiful%20and%20was%20simply%20delicious.%20Everyone%20at%20the%20potluck%20loved%20it%20!%3C/p%3E%3Cp%3EI%20spent%20so%20much%20time%20trying%20to%20decorate%20the%20cake%20(%20as%20I%20was%20simply%20excited%20about%20making%20it%20look%20good)%20that%20I%20dint%20get%20much%20time%20to%20take%20good%20photographs%20before%20going%20for%20the%20potluck%20party.%3C/p%3E%3Cp%3EThe%20sponge%20cake%20came%20out%20really%20soft%20and%20perrrrrfect!%20The%20only%20thing%20I%20might%20try%20to%20change%20next%20time%20while%20making%20this%20cake%20would%20the%20amount%20of%20eggs%20used,%20but%20I%20guess%20that's%20what%20made%20the%20cake%20so%20so%20soft!!%20It%20was%20firm%20yet%20simply%20melt-in-your%20mouth%20good!%3C/p%3E%3Cp%3EA%20Gateau%20is%20a%20French%20style%20sponge%20cake%20traditionally%20made%20with%20cream%20and%20may%20be%20multilayered.%3C/p%3E%3Cp%3EI%20had%20some%20Mango%20pulp,%20Whipping%20cream%20and%20canned%20peaches%20at%20home%20and%20thought%20of%20adding%20those%20in%20the%20cake%20where%20I%20flavored%20my%20whipped%20cream%20with%20Mango%20pulp%20and%20used%20the%20juice%20from%20the%20canned%20peaches%20to%20moisten%20the%20cake%20and%20decorated%20the%20cake%20with%20peaches%20(and%20few%20strawberries).%3C/p%3E%3Cp%3EI%20didn't%20want%20a%20big/thick%20sponge%20cake%20so%20I%20poured%20half%20the%20cake%20batter%20into%20my%20flower%20shaped%20cake%20pan%20and%20that%20cake%20I%20got%20to%20keep%20to%20myself%20and%20got%20to%20share%20some%20slices%20with%20Ria%20and%20few%20other%20friends%20and%20you%20:-)%3C/p%3E%3Cp%3EMango%20Gateau%20with%20Peaches%20and%20Cream%20Recipe%3C/p%3E%3Cp%3ERecipe%20source%20:%20Ria's%20Collection%3C/p%3E%3Cp%3EYou'll%20need%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EFor%20the%20sponge%20cake:%3C/p%3E%3Cp%3E1.%20Preheat%20Oven%20to%20350F.%3C/p%3E%3Cp%3E2.%20In%20a%20bowl%20beat%20together%20the%20eggs%20and%20sugar%20until%20nice%20and%20fluffy%20(approx%205-10mins%20without%20stopping)%3C/p%3E%3Cp%3E3.%20Whisk%20together%20the%20flour%20and%20baking%20powder%20and%20slowly%20incorporate%20the%20flour%20into%20the%20egg-sugar%20mixture.%3C/p%3E%3Cp%3E4.%20Grease%20a%209%20inch%20baking%20tray%20slightly%20with%20butter%20and%20pour%20the%20cake%20batter%20in%20the%20cake%20pan.%20(%20I%20poured%20only%20half%20the%20batter%20in%20my%20round%20cake%20pan%20,%20and%20poured%20the%20rest%20into%20my%20flower%20shaped%20pan)%3C/p%3E%3Cp%3E5.%20Bake%20for%2025-20mins%20or%20until%20a%20tooth%20pick%20inserted%20into%20cake%20comes%20out%20clean%20and%20let%20it%20cool%20before%20removing%20from%20the%20cake%20pan.%3C/p%3E%3Cp%3EFor%20the%20cream%20frosting:%3C/p%3E%3Cp%3E1.%20In%20a%20bowl%20beat%20the%20whipping%20cream%20until%20stiff%20peaks%20appear%20and%20slowly%20add%20the%20powdered%20sugar.%3C/p%3E%3Cp%3E2.%20Fold%20in%20the%20mango%20pulp%20and%20make%20your%20mango%20cream.%3C/p%3E%3Cp%3E3.%20Make%20two%20halves%20of%20the%20cake%20and%20pour%20some%20juice%20from%20the%20canned%20peaches%20on%20the%20inside%20(this%20further%20moistens%20and%20flavours%20the%20cake)%20and%20then%20put%20the%20mango%20cream%20and%20some%20mango%20pulp%20over%20it.%3C/p%3E%3Cp%3E4.%20Place%20the%20other%20half%20of%20the%20cake%20over%20this%20cream%20and%20pulp%20layer%20and%20coat%20the%20outer%20layers%20of%20the%20cake%20also%20with%20the%20mango%20cream%20and%20level%20it%20out%20smoothly%20with%20a%20butter%20knife.%3C/p%3E%3Cp%3E5.%20Decorate%20the%20cake%20with%20sliced%20peaches%20and%20whipped%20cream.%20Strawberries%20also%20give%20a%20really%20good%20taste%20with%20the%20mango%20cream.%3C/p%3E%3Cp%3ESuggestion:%20If%20the%20cake%20top%20is%20uneven%20or%20bulged%20out%20after%20baking%20and%20cooling%20,%20then%20using%20a%20large%20serrated%20knife%20slowly%20cut%20the%20bulged%20portion%20and%20shape%20it%20and%20level%20it%20and%20invert%20the%20cake%20before%20frosting%20,so%20that%20the%20bottom%20side%20of%20the%20cake%20becomes%20the%20cakes%20top%20part%20and%20looks%20neat.%3C/p%3E%3Cp%3ESharing%20the
