%3C/p%3E%3Cp%3EI%20couldn't%20find%20any%20suitable%20mango%20chiffon%20cake%20recipe%20so%20I%20tweaked%20this%20cranberry%20yoghurt%20chiffon%20recipe%20as%20I%20reckoned%20that%20mango%20puree%20somewhat%20has%20the%20same%20consistency%20of%20yoghurt?%3C/p%3E%3Cp%3EThe%20mango%20chiffon%20turned%20out%20fabulous!%20The%20chiffon%20sponge%20rose%20high%20and%20mighty%20when%20they%20were%20baking%20in%20the%20oven...they%20were%20at%20least%20an%20inch%20above%20the%20rim,%20I'm%20not%20kidding!%20Unlike%20my%20previous%20attempt%20at%20baking%20chiffon%20cakes%20in%20square%20paper%20cups,%20the%20cake%20didn't%20crack%20all%20over%20which%20made%20them%20looked%20really%20like%20huat%20kuehs(steamed%20cakes).%20This%20time,%20with%20my%20usual%20round%20muffin%20paper%20cups,%20the%20'high-rised'%20cakes%20reminded%20me%20of%20souffles%20or%20cakes%20topped%20with%20macaroons!%3C/p%3E%3Cp%3EMy%20younger%20child%20went%20'woah!'%20when%20he%20first%20caught%20sight%20of%20the%20cupcakes%20in%20the%20oven...upon%20closer%20scrutiny%20he%20went%20'oh%20dear!%20oh%20dear!'%20when%20the%20batter%20appeared%20to%20be%20in%20danger%20of%20overflowing%20anytime.%20I%20told%20him%20matter-of-factly,%20%22Don't%20worry,%20they%20will%20deflate%20upon%20cooling.%22%20%22Why?%22%20he%20asked.%20%22Hmmm...because%20when%20it%20is%20hot,%20it%20expands,%20when%20it%20is%20cold,%20it%20contracts.%20The%20air%20bubbles%20inside%20the%20cake%20batter%20expands%20during%20baking,%20and%20contracts%20or%20pops%20when%20cooled.%20The%20cake%20will%20collapse%20and%20sink.%22%20I%20don't%20know%20whether%20my%20answer%20is%20correct%20but%20he%20was%20happy%20with%20it,%20lol.%3C/p%3E%3Cp%3EWith%20the%20well%20baked%20chiffon%20cakes,%20I%20went%20on%20to%20prepare%20the%20filling%20cum%20frosting.%20The%20filling%20or%20frosting%20on%20the%20cupcakes%20is%20a%20mixture%20of%20whipping%20cream,%20yoghurt%20and%20fresh%20mangoes.%20It%20is%20much%20lighter%20than%20buttercream%20and%20taste%20a%20lot%20like%20ice%20cream.%20Well,%20it%20has%20to%20be%20since%20I%20have%20followed%20this%20mango%20yoghurt%20ice%20cream%20recipe%20:)Just%20like%20Hokkaido%20chiffon%20cupcakes,%20I%20have%20filled%20the%20inside%20of%20each%20cupcake%20with%20the%20mango%20frosting.%20Although%20the%20texture%20is%20a%20bit%20denser%20than%20chiffon%20cakes%20baked%20in%20a%20tube%20pan,%20it%20still%20taste%20light%20and%20very%20refreshing...the%20mango%20flavour%20is%20very%20prominent%20even%20without%20any%20artificial%20flavourings.%20These%20cupcakes%20are%20certainly%20less%20sinful%20than%20butter%20cupcakes...but,%20that%20is,%20as%20long%20as%20you%20can%20refrain%20from%20eating%20a%20few%20at%20one%20go,%20lol!%20I%20shall%20end%20my%20post%20with%20my%20favourite%20picture%20of%20theses%20chiffon%20cupcakes...love%20the%20nice%20wrinkles%20on%20top.%3C/p%3E%3Cp%3EI%20doubt%20I%20will%20ever%20fall%20out%20of%20love%20with%20Baking.%3C/p%3E%3Cp%3EBaking%20is%20Amazing...Baking%20is%20Fun!%3C/p%3E%3Cp%3EHappy%20Baking%20everyone!%3C/p%3E%3Cp%3EMango%20Chiffon%20Cupcakes%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E(makes%2010%20cupcakes)%3C/p%3E%3Cp%3Efor%20the%20chiffon%20cupcakes:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3Eto%20make%20the%20cupcakes:%3C/p%3E%3Cp%3EBlend%20100g%20mangoe%20flesh%20till%20smooth.%20Set%20aside.%3C/p%3E%3Cp%3EPlace%20egg%20yolks%20in%20a%20mixing%20bowl.%20With%20a%20manual%20hand%20whisk,%20whisk%20the%20yolks%20a%20little.%20Add%20in%20sugar%20and%20whisk%20to%20combine.%20Add%20in%20vegetable%20oil%20gradually,%20whisk%20to%20combine.%20Add%20the%20mango%20puree,%20lemon%20juice,%20whisk%20to%20combine.%20Sieve%20over%20the%20flour%20and%20whisk%20till%20the%20flour%20is%20fully%20incorporated.%20Do%20not%20over%20mix.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20clean,%20dry%20mixing%20bowl,%20beat%20egg%20whites%20with%20a%20handheld%20electric%20mixer%20on%20low%20speed%20until%20mixture%20becomes%20frothy%20and%20foamy.%20Add%20half%20of%20the%20sugar%20amount%20and%20turn%20to%20high%20speed%20and%20beat%20the%20mixture.%20Continue%20to%20add%20in%20the%20remaining%20sugar%20and%20beat%20until%20the%20egg%20whites%20reaches%20the%20soft%20peak%20stage.The%20soft%20peak%20stage%20is%20reached%20when%20the%20peaks%20of%20the%20whites%20curl%20over%20and%20droop%20slightly.%20The%20egg%20whites%20should%20appear%20smooth%20and%20glossy.%20(Do%20not%20over%20beat%20the%20whites%20still%20stiff,%20it%20is%20better%20to%20beat%20the%20whites%20still%20soft%20peaks%20for%20easy%20folding%20with%20the%20yolk%20batter.)%3C/p%3E%3Cp%3EAdd%20the%20beaten%20egg%20whites%20into%20the%20egg%20yolk%20batter%20in%203%20separate%20additions,%20each%20time%20folding%20gently%20with%20a%20spatula%20until%20just%20blended.%3C/p%3E%3Cp%3ESpoon%20batter%20into%20paper%20cups%20till%20it%20reaches%20the%20rim.%20Place%20paper%20cups%20onto%20baking%20tray%20and%20bake%20in%20pre-heated%20oven%20at%20180%20degC%20for%2012~15%20mins,%
