.%3C/p%3E%3Cp%3EI%20always%20have%20a%20can%20of%20mango%20pulp%20at%20home.%20At%20times%20I%20do%20not%20get%20those%20fresh%20mango%20slices%20and%20that's%20when%20this%20comes%20in%20handy.%20It%20is%20loaded%20with%20sugar%20I%20know%20-%20but,%20having%20one%20handy%20always%20helps.%20Below%20are%20the%20two%20pulps%20that%20I%20have%20in%20my%20pantry.%3C/p%3E%3Cp%3EBoth%20images%20were%20sourced%20from%20the%20net%20(I%20just%20did%20a%20google%20image%20search%20for%20mango%20pulp%20cans)%3C/p%3E%3Cp%3EI%20had%20opened%20one%20can%20and%20had%20some%20of%20the%20unused%20pulp%20inside%20my%20fridge.%20Had%20to%20use%20it%20up%20before%20it%20got%20bad.%20So,%20finally%20gave%20in%20and%20made%20the%20mango%20cake.%20I%20have%20not%20been%20a%20fan%20of%20fruit%20cakes%20ever%20(except%20the%20banana%20bread)%20as%20these%20cakes%20turn%20a%20bit%20dense.%20But,%20I%20was%20pleasantly%20surprised%20at%20how%20this%20cake%20came%20out%20spongy%20and%20moist%20and%20had%20the%20right%20amount%20of%20spring%20to%20it.%20The%20addition%20of%20cardamom%20took%20it%20to%20a%20whole%20different%20level.%20The%20beautiful%20golden%20hue%20on%20the%20cake%20is%20what%20spring%20and%20summer%20are%20made%20of.............%20yes,%20we%20need%20that%20here.%20These%20below%20freezing%20temperatures%20are%20kinda%20getting%20annoying%20now.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20Fahrenheit.%20Grease%20a%20cake%20pan%20-%20I%20used%20a%20bundt%20pan.%20But,%20you%20could%20use%20a%209X13%20(inch)%20baking%20pan.%20Or%20you%20could%20even%20get%2020%20to%2024%20cupcakes%20out%20of%20it.%3C/p%3E%3Cp%3ESieve%20the%20flour,%20baking%20powder,%20baking%20soda,%20cardamom%20powder%20and%20salt%20and%20keep%20it%20aside.%3C/p%3E%3Cp%3EIn%20a%20mixing%20bowl%20-%20beat%20the%20eggs%20till%20they%20are%20nice%20and%20fluffy.%20Add%20the%20sugar%20and%20mix%20well%20till%20it%20gets%20dissolved.%20Add%20the%20melted%20butter%20(make%20sure%20it%20is%20not%20hot)%20and%20milk%20and%20mix%20well%20for%20about%205%20minutes.%20Now%20add%20the%20mango%20pulp%20and%20fold%20the%20mixture%20lightly%20till%20everything%20is%20integrated.%3C/p%3E%3Cp%3EAdd%20the%20flour%20mixture%20and%20fold%20it%20in%20using%20a%20ladle.%20Mix%20it%20well%20till%20no%20lumps%20can%20be%20seen.%20Be%20careful%20not%20to%20overmix.%3C/p%3E%3Cp%3EPour%20it%20into%20the%20pan%20and%20bake%20for%2030%20to%2040%20minutes.%20After%2030%20minutes%20check%20to%20see%20the%20doneness%20using%20a%20toothpick.%20Insert%20the%20toothpick%20in%20the%20middle%20of%20the%20cake%20and%20remove%20-%20if%20its%20clean,%20its%20done%20-%20else%20let%20it%20bake%20for%20another%205%20minutes%20before%20checking.%3C/p%3E%3Cp%3EFor%20cupcakes%20the%20baking%20time%20will%20be%20in%20between%208%20to%2012%20minutes.%3C/p%3E%3Cp%3ERemove%20onto%20a%20cooling%20rack%20and%20cut%20after%20its%20cooled%20down.%3C/p%3E){kind=link}
