- Mix 2 c. flour, baking pwdr, sugar, and salt in deep bowl. Make a well in center and pour in egg and water. Gradually stir dry ingredients into water and egg. When well mixed knead with hands till dough can be gathered into ball. If dough is sticky add in up to 1/4 c. more flour 1 Tbsp. at a time.
- Cover with dampened towel and let dough rest 30 min. Preheat oven to lowest setting. Line baking sheet with thick paper towels. Pour oil into deep fryer 2-3 inches deep and heat to 350 degrees. On lightly floured surface roll dough 1/2 inch thick. Cut dough into 2 x 1 1/2 inch pcs. Fry Mandazi turning occasionally for about 4 min or possibly till richly colored and crisp. Keep hot in the oven on baking sheet till serving.
