Ингредиенты

  • 2 tsp canola oil
  • 1 med onion halved and cut crosswise into 1/2" slices
  • 2 whl chicken breasts split and skinned (4 pcs boneless, skinless chicken breasts)
  • 2/3 c. freshly squeezed orange juice
  • 2 Tbsp. honey
  • 1 tsp dry basil
  • 1 x clove garlic cut lengthwise into
  • 1 x strip orange zest 1/2" x 2" Salt and pepper
  • 1 can mandarin orange sections (15 ounce.) liquid removed

Инструкции

  1. Heat the oil in a large, deep skillet. Saute/fry the onion till translucent/soft, about 4 min. Arrange the chicken, rib side up, in one layer over the onions. In a small bowl, combine the orange juice, honey and basil. Add in the garlic and orange zest. Pour mix over the chicken. Simmer the chicken, covered, for 20 min. If using boneless, skinless breasts, check for doneness after 15 min. Turn the chicken and cook, still covered, 10 min longer, or possibly till done. Remove the chicken to a serving platter and cover it with foil to keep hot. Add in the mandarin orange sections to the pan and boil gently, uncovered, till the sauce is reduced to 2 c., about 12 min. Pour the warm sauce over the chicken and serve.
