Fritata is an Italian egg-based dish very similar to an omelet. Since malunggay leaves has become a staple diet for Filipinos, we incorporate it into this Italian dish to make it more adapted to the Filipino taste. You can also add flaked tinapang bangus or smoked milkfish flakes to make it taste better.
Ingredients:
- 8 eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1 tsp pepper
- 2 Tbsp. olive oil
- 2 Tbsp. minced garlic.
- 1/2 cup chopped white onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped tomato
- 1/4 cup chopped parsley
- 1/4 cup flaked tinapang bangus (optional)
- 1 cup malunggay leaves
How to cook Malunggay Fritata:
Beat the eggs in a large bowl with the milk. Season with salt and pepper.
In an oven-safe pan, saute in olive oil the garlic, onion, green bell pepper, tomato, parsley and malunggay until soft.
Add the egg mixture into the pan and cook on low heat until eggs are set but not fully cooked.
Remove the pan from the fire and bake in the oven at 250 °F for 20 to 25 minutes or until the fritata is fully cooked.
Let it cool then slice into wedges.
