these are very unique and interesting cookies. i made gale's malted chocolate chip cookies and absolutely loved them. i decided to try an alternate version of the cookies using chocolate covered espresso beans. i really loved this version - even more than the original version!
malted chocolate covered espresso bean cookies
- adapted from gale gand's malted chocolate chip cookies
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 c (2 sticks) unsalted butter room temp
- 1 c brown sugar
- 1/2 c sugar
- 1 1/2 tsp vanilla
- 1 tbs espresso
- 2 lg eggs
- 1/2 c malt powder
- 1 1/2 c chocolate covered espresso beans chopped
- preheat oven to 350
- line baking sheet with silpat
- in mixer, cream butter and sugar. add vanilla, eggs and espresso. mix to combine. add malt powder. mix
sift flour, baking soda and salt.
add flour mix to wet.
incorporate chocolate covered espresso bean into batter.
chill the batter for 15 minutes before scooping.
use a small ice cream scoop to portion the dough.
bake for 8 - 10 minutes.
cool on rack.
