- For the Makhani Paneer Layer:
- Paneer - 1cup, cubed
- Onion - 1 medium, chopped
- Ginger-garlic paste - 1tsp
- Tomato puree - 1cup
- Cardamom pods - 3
- Cloves - 3
- Mace - 1
- Cinnamon stick - 1" piece
- Ground Cumin - ½tsp
- Ground Coriander - ½tsp
- Tandoori Masala - 1tsp
- Turmeric powder - ½tsp
- Almond/ Cashew paste - 2tbsp (soak either of the nuts and then grind to a smooth paste. I used almond butter instead)
- Cream/ Whole Milk - ¼cup
- Salt - to taste
- For Garnish:
- Almonds/ Cashews - 2tbsp each, roasted and chopped
- Cilantro - ¼cup, chopped
- Mint - ¼cup, chopped
- Fried Onions - ½cup

%20for%20an%20awesome%20tasting%20biryani%20that%20is%20sure%20to%20wow%20anyone.%3C/p%3E%3Cp%3EI%20had%20more%20than%20a%20gallon%20of%201%25%20milk%20that%20needed%20to%20be%20used%20up%20real%20fast,%20so%20I%20made%20paneer%20flavored%20with%20cumin%20seeds,%20ground%20coriander,%20chili%20flakes%20and%20kasuri%20methi.%20Now%20that%20I%20had%20that%20in%20the%20fridge,%20I%20was%20looking%20for%20recipes%20to%20use%20it%20and%20found%20the%20recipe%20for%20Makhani%20Paneer%20biryani%20here.%20It%20sounded%20like%20the%20perfect%20dish%20to%20make%20with%20my%20homemade%20flavored%20paneer.%3C/p%3E%3Cp%3EThe%20biryani%20turned%20out%20spicy%20and%20very%20yummy.%20Since%20there%20are%20not%20many%20vegetables%20in%20the%20biryani%20itself,%20%20I%20served%20it%20with%20Sandhya's%20spinach%20raita%20and%20it%20was%20just%20a%20perfect%20accompaniment.%3C/p%3E%3Cp%3ERecipe%20adapted%20from%20here.%3C/p%3E%3Cp%3EIngredients:%20Serves%202~3%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EFor%20the%20Rice%20Layer:%20Rinse%20the%20rice%20and%20soak%20for%20at%20least%2030%20minutes.%3C/p%3E%3Cp%3EHeat%202tsp%20oil%20in%20a%20heavy%20bottom%20pan,%20add%20the%20whole%20spices%20and%20once%20they%20start%20to%20get%20fragrant,%20then%20add%20the%20drained%20rice%20and%20fry%20for%202%20minutes,%20stirring%20frequently%20to%20avoid%20sticking%20to%20the%20pan.%3C/p%3E%3Cp%3ENext%20add%20water%20and%20salt.%20Bring%20the%20mixture%20to%20a%20boil,%20then%20lower%20the%20heat,%20cover%20and%20cook%20for%2010~15%20minutes%20or%20until%20the%20water%20is%20absorbed%20and%20rice%20is%20about%2090%25~95%25%20cooked%20through.%3C/p%3E%3Cp%3ETake%20the%20pan%20off%20the%20heat%20and%20let%20it%20rest%20for%2010%20minutes.%3C/p%3E%3Cp%3EFor%20the%20Makhni%20Paneer%20Layer:%20Heat%202tbsp%20oil%20and%201tbsp%20ghee%20in%20a%20large%20nonstick%20pan,%20gently%20add%20the%20paneer%20pieces%20and%20fry%20till%20they%20are%20lightly%20brown%20on%20all%20sides.%20Don't%20overcook%20the%20paneer%20at%20this%20stage,%20overcooking%20will%20result%20in%20very%20chewy%20paneer.%20Remove%20the%20paneer%20using%20a%20slotted%20spoon%20onto%20a%20plate%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20the%20same%20pan,%20add%20all%20the%20whole%20spices%20and%20once%20they%20get%20aromatic,%20add%20the%20onions,%20green%20chilies%20and%20ginger-garlic%20paste.%20Cook%20on%20medium%20flame%20until%20the%20onions%20turn%20lightly%20browned.%3C/p%3E%3Cp%3EAdd%20turmeric,%20ground%20cumin,%20coriander,%20tandoori%20masala%20and%20salt.%20Cook%20for%201%20minute.%3C/p%3E%3Cp%3ENext%20add%20the%20tomato%20puree,%20mix%20well;%20cover%20and%20cook%20for%207~10%20minutes.%3C/p%3E%3Cp%3EStir%20in%20the%20almond%20paste%20and%20cream.%20Mix%20well%20and%20add%20the%20fried%20paneer.%20Cover%20and%20simmer%20for%206~8%20minutes.%20The%20makhni%20layer%20is%20ready%20to%20be%20layered.%3C/p%3E%3Cp%3ETo%20Assemble:%20Preheat%20the%20oven%20to%20400.%20Lightly%20grease%20a%20baking%20pan%20with%20cooking%20spray.%3C/p%3E%3Cp%3ESpread%20%E2%85%93rd%20of%20the%20rice%20in%20the%20bottom%20of%20the%20pan,%20then%20top%20it%20with%20%C2%BD%20of%20the%20paneer%20mixture.%20Sprinkle%20%C2%BD%20of%20the%20toasted%20nuts,%20fried%20onions%20and%20chopped%20herbs.%3C/p%3E%3Cp%3ERepeat%20the%20layers%20with%20rice%20and%20paneer%20mixture.%20Top%20the%20paneer%20layer%20with%20the%20remaining%20%E2%85%93rd%20of%20the%20rice%20and%20sprinkle%20the%20top%20with%20%C2%BD%20of%20the%20toasted%20nuts,%20fried%20onions%20and%20chopped%20herbs.%20Cover%20the%20pan%20tightly%20with%20a%20foil%20and%20bake%20for%2015~18%20minutes%20or%20until%20the%20rice%20is%20completely%20tender.%20Serve%20with%20raita%20and%20enjoy!!%3C/p%3E){kind=link}
