Although I love making soup, it's always bothered me that making stock feels so wasteful. As the child of one of the world's thriftiest people (love you, mom!), the idea of tossing a whole bunch of gorgeous carrots, celery, onions, and herbs into the pot, only to remove them all a little while later, replacing them with new veggies that would feature in the actual soup, has always rubbed me the wrong way.
And buying cartons of stock is expensive and those cartons may or may not actually be recyclable (nevermind whether my garbage company actually recycles the stuff it claims to recycle...) so that was not really doing it for me either. ,%20the%20idea%20of%20tossing%20a%20whole%20bunch%20of%20gorgeous%20carrots,%20celery,%20onions,%20and%20herbs%20into%20the%20pot,%20only%20to%20remove%20them%20all%20a%20little%20while%20later,%20replacing%20them%20with%20new%20veggies%20that%20would%20feature%20in%20the%20actual%20soup,%20has%20always%20rubbed%20me%20the%20wrong%20way.%3C/p%3E%3Cp%3EAnd%20buying%20cartons%20of%20stock%20is%20expensive%20and%20those%20cartons%20may%20or%20may%20not%20actually%20be%20recyclable%20(nevermind%20whether%20my%20garbage%20company%20actually%20recycles%20the%20stuff%20it%20claims%20to%20recycle...)%20so%20that%20was%20not%20really%20doing%20it%20for%20me%20either.%20But%20then,%20a%20couple%20months%20ago,%20I%20saw%20a%20post%20on%20Facebook%20about%20making%20vegetable%20stock%20FROM%20KITCHEN%20SCRAPS!!!!%20My%20prayers%20had%20been%20answered.%3C/p%3E%3Cp%3ESo%20I%20started%20saving%20some%20of%20the%20veggie%20scraps%20(more%20below%20on%20which%20ones%20are%20best%20to%20use%20and%20which%20ones%20you%20should%20avoid)%20that%20would%20otherwise%20have%20gone%20straight%20into%20the%20compost%20bucket.%20I%20stored%20them%20in%20one%20of%20this%20one-gallon%20Ziploc%20bags%20in%20my%20freezer.%20Since%20I%20like%20to%20cook%20and%20I%20like%20vegetables,%20they%20started%20piling%20up%20pretty%20quickly.%3C/p%3E%3Cp%3EThen%20I%20followed%20the%20incredibly%20simple%20instructions%20(basically,%20cover%20them%20with%20water,%20bring%20to%20a%20boil%20and%20simmer%20for%20one%20hour,%20then%20strain)%20to%20make%20my%20own%20homemade%20vegetable%20stock.%3C/p%3E%3Cp%3EAnd%20guess%20what?%20It's%20good!%20It%20was%20easy.%20It%20was%20free.%20And%20absolutely%20no%20vegetables%20were%20wasted%20in%20its%20making.%20Once%20I%20was%20done%20with%20those%20scraps,%20they%20got%20tossed%20on%20the%20compost%20heap,%20too.%3C/p%3E%3Cp%3ENow%20we've%20got%20several%20containers%20of%20the%20stuff%20in%20our%20freezer,%20waiting%20for%20the%20next%20time%20we%20want%20to%20make%20some%20delicious%20soup.%20We%20also%20did%20an%20ice%20cube%20tray%20or%20two%20as%20it's%20great%20to%20have%20some%20smaller%20units%20of%20stock%20on%20hand%20if%20you%20just%20need%20to%20de-glaze%20a%20pan%20or%20add%20a%20little%20bit%20of%20liquid%20to%20something%20but%20don't%20want%20to%20go%20whole%20hog%20and%20defrost%20an%20entire%20yogurt%20container%20(those%20are%20our%20freezing%20containers%20of%20choice%20for%20bigger,%20liquid-y%20stuff)%20of%20the%20stuff.%3C/p%3E%3Cp%3EThe%20only%20thing%20I%20plan%20to%20change%20is%20omitting%20onion%20skins%20as%20I%20think%20I%20might%20prefer%20a%20clearer-looking%20stock%20-%20onion%20skins%20add%20nice%20flavor%20but%20also%20darken%20the%20color%20considerably.%20This%20is%20totally%20up%20to%20you,%20though.%3C/p%3E%3Cp%3ESo%20get%20scrappy%20and%20then%20get%20simmering!%20Once%20you're%20fully%20stocked,%20I've%20got%20a%20short%20list%20of%20delicious%20soups%20you%20might%20want%20to%20try%20your%20stock%20on%20at%20the%20bottom%20of%20this%20post.%3C/p%3E%3Cp%3EHomemade%20Vegetable%20Stock%20From%20Kitchen%20Scraps%3C/p%3E%3Cp%3EMakes%20roughly%203%20quarts%3C/p%3E%3Cp%3EVeggies%20To%20Save%3C/p%3E%3Cp%3EOnions,%20carrots,%20and%20celery%20form%20the%20backbone%20of%20veggie%20stock,%20but%20don't%20stop%20there!%20Lots%20of%20other%20veggies%20add%20sweetness%20and%20flavor:%20leeks,%20scallions,%20garlic,%20onions%20(see%20my%20note%20below),%20fennel,%20chard,%20lettuce,%20potatoes,%20parsnips,%20green%20beans,%20pea%20pods,%20zucchini%20and%20other%20squash,%20bell%20peppers,%20eggplant,%20mushrooms,%20asparagus,%20corn%20cobs%20(think%20sweet!),%20winter%20squash%20skins,%20beet%20greens,%20and%20herbs%20like%20dill,%20thyme,%20parsley,%20cilantro%20and%20basil.%20You%20can%20use%20anything%20that%20is%20beginning%20to%20lose%20its%20luster%20but%20steer%20clear%20of%20anything%20that%20has%20actually%20gone%20bad,%20of%20course.%3C/p%3E%3Cp%3EVeggies%20to%20Skip%3C/p%3E%3Cp%3EThese%20vegetables%20tend%20to%20overpower%20the%20stock%20flavor-wise%20(and%20some%20of%20them%20turn%20a%20bit%20bitter)%20so%20you%20may%20want%20to%20dump%20them%20directly%20on%20the%20compost%20heap,%20instead:%20cabbage,%20Brussels%20sprouts,%20broccoli,%20cauliflower,%20turnips,%20rutabagas,%20artichokes.%20And%20skip%20anything%20rotten%20or%20moldy.%3C/p%3E%3Cp%3EVeggies%20You%20May%20Want%20to%20Skip%3C/p%3E%3Cp%3EYou%20can%20use%20beet%20root%20scraps%20and%20onion%20skins%20but%20just%20be%20aware%20that%20they%20will%20make%20your%20stock%20either%20a%20deep%20red%20or%20a%20deep%20brown%20so%20you%20may%20want%20to%20skip%20them.%20I%20plan%20to%20skip%20'em%20in%20the%20future.%3C/p%3E%3Cp%3EStoring%20the%20Scraps%3C/p%3E%3Cp%3EYou%20will%20want%20to%20collect%20roughly%204-6%20cups%20of%20vegetables%20to%20make%202%20quarts%20of%20stock.%20You%20can%20either%20save%20your%20scraps%20throughout%20the%20week%20in%20a%20large%20Ziploc%20or%20some%20other%20airtight%20container%20in%20the%20fridge,%20or%20if%20you're%20collecting%20scraps%20for%20longer%20than%20a%20week,%20just%20keep%20them%20in%20the%20freezer%20(this%20is%20what%20I%20do.)%3C/p%3E%3Cp%3EMaking%20the%20Stock%3C/p%3E%3Cp%3E1.%20Place%20roughly%204-6%20cups%20of%20scraps%20in%20a%205%20quart%20stock%20pot.%20Add%201-2%20bay%20leaves%20and%20a%20few%20black%20peppercorns%3C/p%3E%3Cp%3E2.%20Cover%20it%20all%20with%20cold%20water%20then%20bring%20it%20to%20a%20boil.%20Lower%20the%20heat%20to%20medium%20and%20simmer%20uncovered%20for%20about%20an%20hour.%20Any%20more%20than%20an%20hour%20and%20the%20flavor%20will%20begin%20to%20deteriorate.%3C/p%3E%3Cp%3E3.%20Strain%20vegetables%20using%20a%20fine%20mesh%20strainer%20or%20a%20colander%20and%20giving%20them%20a%20press%20to%20make%20sure%20you%20get%20all%20the%20broth.%20Quick%20tip:%20I%20made%20mine%20in%20my%20steamer%20pot%20from%20Ikea%20which%20made%20the%20straining%20incredibly%20easy%20since%20all%20the%20veggies%20were%20in%20the%20steamer%20insert%20and%20I%20just%20lifted%20it%20out%20of%20the%20pot%20once%20it%20was%20done.%20Let%20cool%20then%20pour%20into%20glass%20jars,%20clean%20yogurt%20containers%20or%20freezer%20bags.%20Let%20cool%20completely%20in%20the%20fridge%20and%20then%20freeze%20or%20store%20for%20up%20to%20five%20days%20in%20the%20fridge.%3C/p%3E){kind=link}
