Mafalde Pasta with Morel Mushrooms and Asparagus encompasses everything magical about spring: bright, tender shoots of green asparagus, and mushrooms that can only be found with a walk in the woods, suddenly pleasant after several months of cold. I am tardy with sharing this recipe, however, since my own spring turned magical with a trip to Italy, and boy have I got things to say about driving here! Scroll to bottom of post for the recipe.

mastered%20stick%20and%20now%20zoom%20up%20and%20down%2015-20%25%20grade%20hills%20that%20are%20only%20about%20as%20wide%20as%20my%20car.%3C/p%3E%3Cp%3EYou%20think%20I%20jest.%20Ha.%3C/p%3E%3Cp%3EMany%20people%20advised%20me%20not%20to%20drive%20in%20Italy.%20To%20that%20I%20said%20hogwash.%20I%20guess%20it%20is%20the%20American%20in%20me,%20but%20I%20just%20cannot%20fathom%20being%20somewhere%20for%204%20weeks%20without%20a%20car%E2%80%93and%20that%20is%20not%20a%20large%20city.%20Emphasis%20on%20that%20last%20part.%20I%20could%20live%20in%20Rome%20or%20Paris%20or%20London%20for%204%20weeks%20without%20a%20car%20easily,%20but%20Calabria%20is%20pretty%20remote.%20I%20am%20more%20convinced%20than%20ever%20now%20that%20I%20have%20done%20it%20that%20I%20would%20have%20missed%20so%20much%20without%20the%20car.%20Like%20what%20you%20ask?%20Medieval%20(Baroque?%20Some%20era,%20who%20knows,%20but%20OLD)%20cities%20carved%20out%20of%20mountaintops%20appearing%20out%20of%20nowhere%20when%20one%20gets%20lost%20driving%20to%20Poitano,%20for%20example%20(top%20middle%20photo%20and%20the%20church%20in%20the%20second%20complete%20row).Breathtaking%20mountain%20vistas.%20Farms%20with%20wooly%20lambs.%20The%20experience%20of%20being%20unfazed%20by%203%20lane%20creation%20in%20a%202%20lane%20road%20just%20so%20people%20can%20pass.%20Crazy%20switchbacks%20for%20getting%20up%20and%20down%20mountains.%20My%20personal%20favorite,%20stopping%20for%20a%20shepherdess%20and%20her%20goats%20crossing%20the%20road%20coming%20home%20from%20Tropea:%3C/p%3E%3Cp%3ENotice%20the%20dog%20on%20the%20far%20right?%20There%20were%20several,%20one%20was%20chasing%20a%20car,%20or%20so%20it%20seemed,%20but%20then%20we%20realized%20he%20was%20with%20the%20goats.%20Made%20me%20nervous!%20But%20still!%20Goats!%20Crossing%20the%20road!%20That%20made%20me%20so%20happy%20I%20took%202%20pics:%3C/p%3E%3Cp%3EAnyway,%20suffice%20to%20say%20it%20has%20been%20exhilarating%20and%20I%20would%20now%20rent%20a%20car%20anywhere%20in%20Europe.%20Except%20the%20British%20Isles.%20I%20need%20more%20than%204%20weeks%20to%20work%20up%20to%20right%20sided%20driving%20in%20the%20left%20lane!%3C/p%3E%3Cp%3EOK%20this%20dish.%20Remember%20the%20asparagus%20dish%20I%20shared%20a%20little%20bit%20ago?%20I%20served%20pork%20tenderloin%20to%20my%20family%20with%20asparagus.%20I%20had%20leftovers%20of%20each,%20but%20no%20leftover%20bread%20and%20not%20enough%20leftover%20asparagus%20for%20all%204%20of%20us.%20So%20I%20re-served%20the%20pork%20as%20it%20was,%20but%20I%20turned%20the%20asparagus%20into%20a%20new%20dish,%20helped%20by%20the%20fact%20that%20while%20my%20family%20was%20with%20me%20they%20went%20mushrooms%20hunting%20and%20found%20several%20pounds%20of%20morel%20mushrooms%20on%20my%20property!%3C/p%3E%3Cp%3EIf%20you%20cannot%20find%20(or%20afford%20the%20ones%20in%20the%20store)%20morels,%20I%20would%20still%20make%20this%20dish%20with%20different%20mushrooms.%20The%20morels%20were%20amazing,%20but%20not%20worth%20not%20making%20the%20dish%20over.%20Because%20the%20dish%20is%20fantastic.%20Likewise,%20if%20you%20do%20not%20have%20leftover%20Asparagus%20with%20Lemon%20and%20Sesame,%20just%20blanch%20fresh%20asparagus%20and%20add%20some%20lemon%20juice%20and%20zest.%20And%20if%20your%20store%20does%20not%20carry%20Mafalde%20pasta,%20just%20grab%20some%20tagliatelle%20or%20fettuccine.%3C/p%3E%3Cp%3EMafalde%20Pasta%20with%20Morel%20Mushrooms%20and%20Asparagus%20%20%20%20Author:%20TheSpicedLife%20Recipe%20type:%20Entree%20%20%20Ingredients%3C/p%3E%3Cp%3E1%20T%20extra%20virgin%20olive%20oil%203%20T%20unsalted%20butter,%20divided%201%20large%20yellow%20onion,%20thinly%20sliced%206-8%20garlic%20cloves,%20minced%202%20T%20fresh%20minced%20thyme%20approximately%201%20lb%20fresh%20morel%20mushrooms,%20quickly%20soaked%20to%20remove%20any%20hiding%20critters%20and%20bottoms%20of%20stems%20removed%20salt%20to%20taste%20%C2%BC%20cup%20dry%20white%20wine%20%C2%BC%20cup%20heavy%20cream%20leftover%20asparagus%20(if%20using%20fresh,%20use%201%20bunch,%20blanched%20and%20add%20lemon%20juice)%20fresh%20ground%20black%20pepper,%20to%20taste%201%20lb%20dry%20mafalde%20pasta,%20cooked%20to%20your%20preference%20%20%20Instructions%3C/p%3E%3Cp%3EHeat%20the%20oil%20and%201%20tablespoon%20of%20butter%20in%20a%20large%20skillet%20over%20medium%20high%20until%20shimmering.%20Add%20the%20onion%20with%20a%20pinch%20of%20salt.%20Cook,%20stirring,%20until%20the%20onions%20are%20translucent%20and%20starting%20to%20get%20golden,%20about%2010%20minutes.%20Add%20the%20thyme%20and%20garlic%20and%20mix.%20Cook%20for%20another%201-2%20minutes.%20Add%20the%20mushrooms%20with%20another%20pinch%20of%20salt.%20Cook,%20stirring,%20until%20the%20mushrooms%20have%20released%20their%20water%20and%20have%20shrunk%20a%20bit,%205-8%20minutes.%20Add%20the%20wine%20and%20stir,%20cooking%20until%20the%20moisture%20has%20evaporated.%20Add%20the%20cream%20and%20asparagus%20and%20toss.%20Cook%20until%20the%20sauce%20has%20t
