  • 14 ounce uncooked elbow macaroni
  • 4 c. water
  • 10 1/2 ounce packaged soft silken tofu, liquid removed
  • 1 c. soymilk
  • 1/2 c. tahini
  • 3 Tbsp. nutritional yeast
  • 1 tsp turmeric Salt, to taste
  • 2 Tbsp. margarine

  1. Makes 10 servings. VEGAN
  2. Preheat oven to 350 degrees. Boil macaroni in water till just underdone: drain in colander. Run cool water over macaroni to stop cooking.
  3. Blend tofu and soymilk in blender or possibly food processor till smooth. Add in tahini.
  4. nutritional yeast, turmeric and salt; mix till smooth. In large bowl, stir together macaroni and 'cheese' sauce. Place mix in lightly oiled ovenproof casserole; top with pats of margarine. Bake till golden brown and bubbly, about 20 min.
  5. Makes 10 servings.
