.%20%20It%20was%20full%20of%20recipes%20from%20America%E2%80%99s%20Favorite%20Resorts,%20and%20since%20Darling%20Daughter%20will%20be%2023%20in%20about%202%20weeks,%20it%20goes%20without%20saying%20that%20the%20book%20is%20a%20bit%E2%80%A6outdated.%3C/p%3E%3Cp%3EIt%20doesn%E2%80%99t%20mean%20the%20recipes%20aren%E2%80%99t%20damn%20good.%20%20Because%20they%20are.%3C/p%3E%3Cp%3EAnd%20this%20is%20one.%3C/p%3E%3Cp%3EThe%20book%20is%20titled%20Recipes%20from%20America%E2%80%99s%20Favorite%20Resorts,%20and%20this%20one%20comes%20from%20the%20Mauna%20Kea%20Beach%20Hotel%20on%20the%20Big%20Island%20of%20Hawaii.%20%20It%E2%80%99s%20my%20understanding%20that%20the%20Mauna%20Kea%20was%20the%20standard%20for%20high-end%20resorts%20in%20Hawaii%20from%20the%20time%20it%20opened%20in%201965%20through%20the%2080s;%20by%20the%20time%20Beloved%20and%20I%20discovered%20it%20in%202003%20it%20was%20a%20little%20shabby%20and%20outdated%20(sort%20of%20like%20my%20cookbook),%20but%20still%20a%20charming%20and%20lovely%20place.%20%20It%20certainly%20had%20one%20of%20the%20nicest%20beaches%20in%20the%20area%20%E2%80%93%20when%20we%20Beloved%20and%20I%20weren%E2%80%99t%20attempting%20to%20access%20remote%20black%20sand%20beaches,%20we%20spent%20hours%20lounging%20in%20a%20secluded%20cove%20at%20the%20far%20end%20of%20the%20Mauna%20Kea%E2%80%99s%20beautiful%20white%20sand%20beach%20(in%20fact,%20I%20learned%20to%20snorkel%20there).%3C/p%3E%3Cp%3E(It%20also%20didn%E2%80%99t%20hurt%20that%20Roy%20Yamaguchi%E2%80%99s%20restaurant%20was%20located%20in%20the%20resort%20right%20across%20the%20road.)%3C/p%3E%3Cp%3EI%20heard%20the%20Mauna%20Kea%20was%20renovated%20a%20couple%20of%20years%20ago,%20and%20I%E2%80%99m%20a%20little%20sad%20because%20it%E2%80%99s%20now%20just%20another%20glitzy%20resort.%20%20I%E2%80%99m%20going%20to%20miss%20that%20Grand%20Old%20Dame%20of%20a%20hotel.%3C/p%3E%3Cp%3EI,%20of%20course,%20knew%20nothing%20of%20this%20when%20I%20first%20received%20this%20little%20gem%20of%20a%20cookbook%20%E2%80%93%20all%20I%20knew%20is%20that%20the%20descriptions%20of%20the%20resorts,%20including%20the%20Mauna%20Kea%20(which%20I%20never%20thought%20I%E2%80%99d%20ever%20really%20see),%20were%20wonderful%20and%20the%20recipes%20made%20me%20want%20to%20cook%20them.%3C/p%3E%3Cp%3ESo%20I%20did,%20and%20you%20should%20too.%20%20This%20is%20not%20an%20inexpensive%20pie%20to%20make,%20so%20I%20usually%20save%20it%20for%20special%20occasions,%20and%20it%20is%20very%20sweet%20and%20very,%20very%20rich%20%E2%80%93%20when%20it%20says%20the%209-inch%20will%20serve%208%20%E2%80%93%2012%20people,%20it%20will%20serve%208%20%E2%80%93%2012%20people.%20%20But%20it%20is%20oh,%20so%20delicious.%3C/p%3E%3Cp%3ENote:%20all%20ingredients%20should%20be%20at%20room%20temperature.%3C/p%3E%3Cp%3EMacadamia%20Nut%20Pie%3C/p%3E%3Cp%3Eserves%208%20%E2%80%93%2012%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325%C2%B0%20F.%3C/p%3E%3Cp%3EMix%20the%20eggs,%20butter,%20honey%20and%20sugar%20with%20an%20electric%20mixer%20on%20low%20until%20smooth.%20Sprinkle%20the%20coconut%20over%20the%20bottom%20of%20the%20pie%20shell;%20pour%20the%20egg/honey%20mixture%20over%20the%20coconut.%20%20Be%20careful;%20the%20crust%20will%20be%20full.%20%20Sprinkle%20the%20macadamia%20nuts%20evenly%20over%20the%20filling.%3C/p%3E%3Cp%3EBake%20for%2060%20minutes,%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%3C/p%3E%3Cp%3ECool%20for%20at%20least%2030%20minutes,%20but%20this%20pie%20is%20delightful%20if%20served%20a%20little%20warm.%3C/p%3E){kind=link}
