  • 3 lrg Large eggs
  • 3/4 c. Vegetable oil
  • 1 c. Granulated sugar
  • 1/4 c. Orange juice
  • 2 Tbsp. Orange peel grated
  • 1 Tbsp. Almond extract
  • 3 3/4 c. All-purpose flour
  • 1 Tbsp. Baking pwdr
  • 1/4 tsp Salt Additional flour
  • 1 c. Macademia nuts coarse chop

  1. In large bowl with electric mixer at medium speed, beat Large eggs and vegetable oil 5 min till fluffy. Gradually beat in sugar; beat in orange juice, grated orange peel and almond extract. At low speed beat in 3-3/4 c. flour, baking pwdr and salt; beat in up to 1/2 c. additional flour if dough appears too sticky. Stir in macadamia nuts. Chill dough, wrapped in plastic, 1 hour.
  2. Heat oven to 350 F; grease large cookie sheet. Divide dough in half; shape each half into 14X2-inch log. Place logs on cookie sheet, spacing well apart; bake 25 min till lightly browned. Remove cookie sheet from oven; maintain oven temperature. Remove logs to cutting board; cut into 1-inch diagonal slices. Place slices, cut side up, on cookie sheet; return to oven. Bake 15 min till crisp and golden brown. Cold on racks. Make 30 slices.
