Mac 'n' Cheese

Sometimes, you just gotta have a bowl! Use Cavatappi noodles. Do not substitute! You will be happy you did. This recipe is rich, creamy and full of flavor.

  • 1 head of garlic roasted
  • 1 tsp olive oil
  • 1 pound of Cavatappi noodles
  • 1/2 pound of sliced Applewood smoked bacon
  • 1-1/2 cups fresh white bread crumbs
  • 1/2 cup grated Parmigiano Reggiano cheese
  • 8 tablespoons of butter
  • 1/4 cup minced shallots
  • 1/2 cup flour
  • 1 quart whole milk
  • 6 oz. grated Gruyere cheese
  • 8 oz. extra-sharp grated Cheddar cheese
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1/4 tsp freshly grated nutmeg

  1. preheat oven to 350
  2. roast garlic for 45 minutes (slice across top, add olive oil S&P to both pieces, put top back, wrap in foil). Squeeze out garlic cloves and smash into a paste)
  3. cook pasta according to directions
  4. cook bacon, crumble, reserve 1 Tablespoon of fat
  5. Topping: Combine bread crumbs, bacon, Parm cheese, 2 Tablespoons of melted butter
  6. heat oven to 375
  7. saute shallots over low heat in bacon fat (1-2 minutes)
  8. add remaining 6 Tablespoons of butter and continue to saute until shallots are translucent
  9. add flour and cook for another 1-2 minutes, increase heat to medium, add milk and garlic stirring constantly
  10. cook sauce until thick (coats back of spoon). remove from heat and add S&P, nutmeg, Gruyere and Cheddar cheeses
  11. stir in cooked pasta
  12. pour into baking dish. sprinkle topping
  13. Optional - also add 1/2 cup of your favorite local bakery garlic croutons that have been crushed into a course consistency
  14. cover with foil and bake 15 minutes
  15. remove foil and continue baking until sauce is bubbly and topping is brown
