If you think you have outgrown the Mac and Cheese then give this a shot, the grown up version of the classic. Using the same concept instead of using cheddar cheese this pasta uses some blue cheese to give it a more potent kick! I know it’s not for everyone but if you’re a blue cheese lover like me then give this a shot. Blue cheese are not created equal so choose your favourite one when you make this at home, like me I am not a fan of other brands and my favourite ones are the Kikorangi and Kahurangi both mouldy like the usual blue cheese but the flavours is just amazing specially the Kahurangi which is so creamy and mildly sweet perfect with this dish.Mac and Blue Cheese Save PrintPrep time Cook time Total time Ingredients400 g macaroni75 g butter¼ cup plain flour3 cups milk2 cups grated tasty/sharp cheddar cheese½ cup blue cheese, crumbled plus more for toppingsaltInstructionsCook macaroni according to packet instructionsIn a large pot melt butter in a medium heat then add the flour, cook until it forms into a roux.Gently add milk while stirring. Add the cheddar cheese and blue cheese then continue to mix until it’s all melted and smooth in texture.Add the macaroni then stir well to coat evenly, if mixture is quite dry to your preference add more milk.
