- Heat butter and oil in frying pan. Add in onions, salt, and pepper. Saute/fry slowly over a low fire till onions are very brown (20-30 min). Add in flour and mustard and stir well, till smooth. Continue stirring while adding the wine, beer, and stock. Bring slowly to a boil. Draw aside and simmer 15 min. Put thick slices of French bread into individual casserole dishes, add in soup and sprinkle with cheese and brown quickly under the broiler (serves 4).
- If made day ahead, don't simmer last 15 min.
