1 1/2 c. green onions
1/2 c. celery
1/4 c. green pepper
4 med. tomatoes
1/4 c. veg. oil
3 T wine vinegar
1 teaspoon salt
1 teaspoon coriander
1 teaspoon mustard seed
Pepper to taste
Jalapenos & green chilies as desired to spiciness

Chop veggies fine. Mix all ingredients together. Let stand in refrigerator 24 to 48 hrs. Can or possibly use fresh with chips.
