%20and%20karaoke.%20Not%20two%20blocks%20away%20was%20a%20dim-sum%20spot%20that%20I%20had%20heard%20nothing%20but%20raves%20over,%20and%20so%20the%20morning%20following%20a%20fun%20night%20at%20a%20fairly%20famous%20drag%20show%20I%20took%20Michael%20over%20there%20for%20some%20delicious%20brunch%20before%20we%20were%20to%20head%20off%20to%20the%20Art%20Museum.%20It%20worked%20out%20kind%20of%20perfectly%20because%20we%20were%20a.)%20hungry,%20and%20b.)%20needed%20fuel%20to%20power%20us%20through%20all%20of%20the%20walking%20we%E2%80%99d%20end%20up%20doing%20that%20day.%3C/p%3E%3Cp%3EWe%20ended%20up%20getting%20lots%20of%20different%20dishes,%20from%20cucumber%20salad%20to%20scallion%20pancakes%20(SO%20GOOD),%20but%20my%20absolute%20favorite%20were%20the%20trays%20of%20Shanghai-style%20soup%20dumplings.%20Having%20only%20been%20introduced%20to%20them%20a%20few%20months%20prior%20at%20a%20place%20near%20my%20office,%20I%20was%20eager%20to%20show%20Michael%20the%20delights%20of%20them%20and%20he%20was%20in%20full%20agreement%20that%20they%20were%20pretty%20damn%20delicious.%20My%20only%20regret%20of%20the%20meal%20was%20not%20ordering%20more%20of%20them,%20but%20by%20then%20we%20were%20stuffed%20and%20ready%20to%20get%20on%20with%20our%20day.%3C/p%3E%3Cp%3EEver%20since%20that%20day%20I%E2%80%99ve%20entertained%20the%20idea%20of%20trying%20to%20make%20them%20at%20home,%20and%20there%20are%20multiple%20tutorials%20out%20there%20to%20show%20you%20how%20to%20do%20just%20that,%20but%20given%20the%20fact%20that%20making%20your%20own%20very%20gelatinous%20stock%20is%20involved,%20I%E2%80%99m%20holding%20off%20on%20really%20diving%20into%20that%20until%20the%20winter%20time,%20ideally%20when%20the%20weather%20is%20lousy%20and%20we%20need%20a%20good%20indoor%20project%20to%20entertain%20ourselves%20for%20the%20day.%20We%20also%20need%20to%20make%20at%20least%20one%20or%20two%20stops%20to%20the%20Lexington%20Market%20to%20stock%20up%20on%20various%20stock-making%20supplies,%20and%20I%20would%20rather%20wait%20until%20it%E2%80%99s%20cooler%20out%20to%20lug%20things%20like%20pig%E2%80%99s%20feet%20and%20the%20like%20across%20town,%20for%20food%20safety%E2%80%99s%20sake.%3C/p%3E%3Cp%3ETo%20curb%20my%20craving%20for%20dumplings,%20though,%20I%20decided%20to%20take%20a%20chance%20last%20weekend%20and%20hope%20that%20Harris%20Teeter%20would%20have%20wonton%20skins%20in%20stock%20so%20I%20could%20make%20some%20of%20the%20shrimp%20and%20chive%20version%20out%20of%20Lucky%20Peach%E2%80%99s%20cookbook.%20The%20recipe%20was%20generally%20pretty%20easy%20to%20follow%20and%20the%20filling%20came%20together%20quickly;%20what%20took%20time,%20of%20course,%20was%20filling%20and%20folding%20the%20damn%20things.%20I%20spent%20a%20solid%20hour%20and%20change%20folding%20those%20damn%20things%20late%20in%20the%20afternoon,%20but%20it%20was%20totally%20worth%20it%20because%20it%20freed%20me%20up%20to%20help%20with%20the%20rest%20of%20food%20prep%20later%20as%20well%20as%20pan-fry%20them%20early%20enough%20in%20the%20evening%20to%20get%20some%20decent%20photographs.%3C/p%3E%3Cp%3EWe%E2%80%99re%20overdue%20on%20a%20trip%20up%20to%20Towson%20to%20the%20fantastic%20Asian%20market%20tucked%20away%20there%20and%20stock%20up%20on%20supplies,%20so%20I%20admittedly%20didn%E2%80%99t%20have%20everything%20called%20for%20in%20the%20Lucky%20Peach%20recipe%20so%20I%20had%20to%20punt%20a%20bit.%20The%20flavors,%20then,%20weren%E2%80%99t%20perfect%20but%20given%20the%20book%E2%80%99s%20firmly%20tongue-in-cheek%20tone,%20I%20figured%20it%20was%20ok%20to%20veer%20off%20course%20a%20little%20anyway.%3C/p%3E%3Cp%3EI%20don%E2%80%99t%20know%20about%20you,%20but%20inevitably%20I%20always%20end%20up%20with%20more%20filling%20than%20wrappers%20mainly%20because%20the%20number%20of%20wrappers%20that%20come%20in%20a%20package%20seems%20to%20vary%20wildly%20by%20brand,%20and%20seldom%20do%20they%20ever%20say%20how%20many%20wrappers%20they%20contain%20therein.%20When%20that%20happens%20I%20usually%20fry%20up%20the%20leftovers%20and%20drizzle%20the%20filling%20with%20soy%20sauce%20as%20a%20sort%20of%20post-wrapping%20snack,%20because%20that%20is%20far%20preferable%20to%20over-stuffing%20your%20dumplings.%20You%20really%20only%20want%20to%20use%20a%20teaspoon%20of%20filling%20because%20otherwise%20it%20will%20be%20much,%20much%20harder%20to%20get%20an%20effective%20seal%20without%20the%20filling%20exploding%20all%20over%20you%20and%20the%20skins%20cracking.%3C/p%3E%3Cp%3EDumpling%20dipping%20sauce%20(see%20below)%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20combine%20everything%20but%20the%20skins%20and%20cornstarch%20and%20stir%20well%20to%20combine.%20Set%20up%20your%20filling%20area%20by%20having%20a%20small%20ramekin%20of%20water%20nearby%20next%20to%20the%20surface%20where%20you%E2%80%99ll%20be%20stuffing%20your%20dumplings.%20Keep%20the%20unused%20sheets%20under%20a%20damp%20paper%20towel%20to%20prevent%20them%20from%20drying%20out.%3C/p%3E%3Cp%3ETo%20make%20each%20dumpling:%20take%20a%20skin,%20run%20a%20dampened%20finger%20along%20all%20four%20sides%20of%20the%20skin,%20and%20then%20carefully%20place%20a%20teaspoon%20of%20filling%20in%20the%20center.%20Fold%20it%20in%20half%20by%20matching%20opposing%20points,%20gently%20press%20down%20to%20seal,%20and%20then%20pleat%20along%20the%20edges%20the%20best%20you%20can.%20(A%20few%20of%20your%20dumplings%20will%20look%20ugly%20as%20sin,%20but%20keep%20practicing%20and%20know%20that%20the%20ugly%20ones%20taste%20just%20a%20good%20as%20the%20pretty%20ones.)%20Place%20the%20finished%20ones%20on%20a%20baking%20sheet%20lined%20with%20a%20silpat%20or%20parchment%20dusted%20with%20cornstarch,%20and%20when%20all%20dumplings%20are%20made%20transfer%20to%20the%20fridge%20until%20you%E2%80%99re%20ready%20to%20steam%20them.%20(These%20make%2040-48%20dumplings%20depending%20on%20how%20many%20skins%20you%20have,%20so%20also%20try%20to%20freeze%20some%20to%20save%20you%20some%20time%20when%20filling%20them%20fresh%20is%20not%20an%20option.)%3C/p%3E%3Cp%3ETo%20steam,%20take%20out%20a%20cast%20iron%20skillet%20(ideally%20one%20you%20can%20cover%20with%20a%20lid)%20and%20place%20a%20generous%20amount%20of%20neutral%20oil%20on%20the%20bottom%20to%20fully%20coat,%20along%20with%20a%20little%20more%20for%20good%20measure.%20Place%20as%20many%20dumplings,%20pleat-side-up,%20as%20you%20can%20fit%20in%20the%20pan%E2%80%93but%20don%E2%80%99t%20overcrowd.%20Bring%20the%20pan%20up%20to%20medium%20heat,%20and%20when%20the%20oil%20is%20sizzling%20add%201/4%20water%20to%20the%20pan%20and%20immediately%20cover,%20letting%20the%20dumplings%20steam%20for%203%20minutes%20or%20so.%20The%20filling%20should%20be%20firm%20and%20the%20skin%20have%20a%20pasta-like%20consistency.%20Once%20the%20dumplings%20lift%20freely%20out%20of%20the%20pan%20remove%20them%20to%20a%20serving%20dish%20and%20serve%20immediately%20with%20dipping%20sauce.%3C/p%3E%3Cp%3ELucky%20Peach%E2%80%99s%20Dumpling%20Sauce%3C/p%3E%3Cp%3E3%20tablespoons%20soy%20sauce%3C/p%3E%3Cp%3E1%20teaspoon%20rice%20vinegar%3C/p%3E%3Cp%3E1%20teaspoon%20sugar%3C/p%3E%3Cp%3E2%20tablespoons%20water%3C/p%3E%3Cp%3Ea%20few%20drops%20of%20sesame%20oil%3C/p%3E%3Cp%3ECombine%20everything%20into%20a%20small%20bowl,%20stir%20to%20combine,%20and%20serve%20with%20dumplings.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
