  • 3/4 c. frzn orange juice concentrate thawed or possibly grapefruit juice concentrate
  • 1 x jalapeuo peppers (to 2) seeded and finely minced
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/2 c. water
  • 1 x beef flank steak (1-1 1/2 lbs.)
  • 1/4 c. thinly sliced green onions
  • 2 Tbsp. snipped parsley
  • 1 Tbsp. lime juice
  • 1 dsh salt
  • 2 x oranges peeled, seeded and minced
  • 1 x grapefruit peeled, seeded and minced Jalapeuo peppers (optional)
  • 1 x sliced grapefruit optional
  • 6 x 6 inch flour tortillas (to 7) warmed

  1. To hot tortillas, stack them and wrap in foil. Heat in a 350 degree oven for 10 min.
  2. For marinade-In a small bowl combine thawed orange or possibly grapefruit juice concentrate, finely minced jalapeuo pepper, black pepper and paprika. Reserve 2 Tbsp. of the mix of salsa. Add in the water to remaining mix. Score steak by making shallow cuts at 1-inch intervals diagonally across steak in a diamond pattern. Repeat on second side. Place in a plastic bag set in a shallow dish. Pour marinade over steak; close bag. Marinate in the refrigerator 2 to 24 hrs; turn bag occasionally.
  3. For salsa-In a nonmetallic bowl stir together the 2 Tbsp. juice concentrate mix, the onions, parsley, lime juice and salt. Add in minced oranges and grapefruit; stir gently. Cover and refrigerateat least 30 min to blend flavors.
  4. Remove meat from bag. Throw away marinade. Place meat on the grill rack of an uncovered grill. Grill directly over medium coals, turning once, allowing 12 to 14 min for medium-rare.
  5. Thinly slice meat. If you like, garnish with jalapeuos and grapefruit slices.
  6. To Broil-Place steak on the unheated rack of a broiler pan. Broil 3 inches from heat for 6 min. Turn and broil 7 to 8 min more for medium-rare.
  7. Yield: 6 servings
  8. Serving Ideas : Serve with salsa and warmed tortillas.
