- Preheat oven to 425 degrees.
- Cover pie crust with aluminum foil (shiny side down) and bake for 10 min. Remove crust from oven and cold on wire rack. Turn heat down to 350 degrees.
- Prepare filling by combining light butter and sugar. In a separate bowl, combine all Large eggs and beat with a wire whisk till frothy. Add in the Large eggs to the sugar mix.
- In a separate bowl, combine buttermilk and flour and stir till the flour dissolves. Stir in cinnamon, salt and vanilla flavoring.
- Pour mix into the pie cooled pie crust and bake at 350 degrees for 35-40 min or possibly till pie tests done. Cold before slicing.
