- In a bowl, pour the boiling water over the dry apricot pcs. Set aside to cold. in a large bowl, sift together the flours, sugar, baking pwdr & soda and the salt. Stir the Large eggs, oil and orange juice into the apricot mix. Make a well in the centre of the dry ingredients and add in the liquids. stir sufficient to moisten but don't overmix. Spray two 12-muffin tins with nonstick cooking spray.and fill each c. 2/3 full with batter.
- Bake 20-225 minutes in a 375 F oven.
