In this lassi variation, America meets India. The flavors of lime and coconut are tied together with yogurt and gently sweetened. Crushed ice is added and a delicious, slushy drink is ready in blender in no time.

This drink admittedly evokes the flavor of Key lime pie. In case you can get Key limes, by all means use them for this delectable drink!

Directions

Place all ingredients in a blender jar. (I used Blendtec blender with WildSide jar.)

Blend until smooth and slushy. (I used ice cream program.)

Serve immediately.

Tips for making this lassi slush

This recipe uses coconut cream in addition to yogurt to create a creamy texture and rich flavor. As there are several different types of coconut cream on the market, I recommend one with as little carbs and as few ingredients as possible. Naturally, choose coconut cream which doesn’t have any sugar or other sweeteners.

The coconut cream I used had 1.8 grams net carbs per 3.5 oz (100 g) stuff, however I saw another brand which contained 4.4 grams net carbs per 3.5 oz (100 g). It’s worth checking the ingredients list and nutrition facts in order to find the best product.

Coconut creams also tend to have all kinds of thickeners like guar gum and xanthan — which are fine — but I suggest that you stay away from those which contain carrageenan (E407), since carrageenan is carcinogenic.

This drink is not extremely sweet. Please feel free to add another packet of NuStevia, or your preferred sweetener.

On the other hand, if you prefer stronger lime flavor and sourer taste, you can add one tablespoon (or to taste) freshly squeezed lime juice.

Other than that, this drink is very easy to make. Just blend it until smooth and slushy, and enjoy immediately.

If you prefer even firmer, ice cream like texture, just place the slush in the freezer for an hour or two, put it back to blender and give it a good whirl.

Tip for variation: For thinner, easy-to-drink beverage you can replace the crushed ice with 1 1/2 cups (360 ml) ice-cold water.
