I have never been much of an apple fan, but my family on the other hand, loves them. we recently had the opportunity to try out Envy Apples and we were all super excited for the chance because as soon as we opened the box all you could smell was sweet apples.

Envy Apples originate from New Zealand but have since been planted in Washington state and Chile. They are a cross-pollination of Braeburn apples with Royal Gala apples. Not only are they a beautiful color of red they are the sweetest apples I have ever eaten. I never thought I would love an apple but Envy Apples are game changers.

I decided instead of just picking at the apples we would do something delicious with them. My family and I are trying to reduce our sugar and carb intake so I thought I would make an unwrapped apple pie so to speak. Basically, it’s a baked cinnamon apples.

Instead of sugar I used Stevia so the calories are low but the flavor is off the charts. Using Envy Apples I didn’t have to use much Stevia because the apples are sweet enough but if you use some other apple you may find yourself needing more Stevia.

Preheat oven to 425˚

Place all the sliced and cored apples in a zip bag then add the nutmeg and cinnamon. Shake well then add to a foil lined 8×8 baking dish.

Next add water, lemon juice and Stevia to a bowl and mix well. Pour on top of the apples. Cover the dish with foil and bake for 30-45 minutes depending on thickness of your apples. Do not bake until the apples turn to mush.

Once the apples are done stir in the walnuts.

Allow the apples to cool for a few minutes, then spoon over whip cream, or ice cream. You can also eat them just the way they are.

For another variation once the apples cool you can add them (add the excess liquid) to a blender and blend to make apple sauce! Original Recipe Source
