.%20%20Wouldn't%20that%20be%20something%20if%20my%20angel%20paid%20some%20sort%20of%20homage%20to%20her%20devoted,%20self-sacrificing%20(did%20I%20mention%20broke%20from%20paying%20for%20college)%20mother,%20I%20couldn't%20help%20but%20think%20to%20myself.%3C/p%3E%3Cp%3EA%20sea%20of%20black%20robes%20went%20by%20and%20out%20of%20the%20corner%20of%20my%20eye%20I%20saw%20her,%20my%20little%20girl%20all%20grown%20up%20on%20the%20way%20towards%20the%20rest%20of%20her%20life.%20%20I%20held%20my%20breath%20looking%20for%20the%20%22I%20have%20the%20best%20mom%20ever%22%20sign%20to%20pass,%20but%20no%20such%20sight,%20apparently%20she%20not%20only%20received%20her%20degree%20with%20honors,%20but%20she%20also%20got%20a%20honorary%20doctorate%20in%20the%20arts%20of%20distilled%20spirits.%20%20Sigh.%20%20It%20only%20took%20me%20half%20a%20second%20to%20realize,%20she%20was%20just%20having%20fun%20and%20being%20herself%20and%20just%20the%20way%20I%20want%20her%20to%20be.%20I%20couldn't%20be%20prouder%20of%20my%20daughter%20and%20the%20last%204%20years%20and%20all%20the%20tears%20(at%20least%20on%20my%20part)%20were%20totally%20worth%20it.%3C/p%3E%3Cp%3EI%20received%20a%20request%20to%20review%20%22Beach%20House%20Baking%20Delicious%20Desserts%22%20by%20Lei%20Shishak.%20%20I%20wasn't%20sure%20if%20I%20could%20find%20the%20time,%20but%20I%20read%20a%20little%20about%20Lei%20and%20liked%20what%20I%20saw%20and%20I%20thought,%20perhaps%20this%20would%20be%20a%20good%20book%20to%20bake%20with%20over%20the%20summer%20and%20ponder%20the%20future.%20%20The%20book%20has%20lots%20of%20easy%20recipes,%20a%20great%20selection%20of%20cupcake%20recipes,%20but%20her%20fun%20ice%20cream%20sandwich%20variations%20are%20something%20I'm%20really%20looking%20forward%20to%20trying.%20I%20couldn't%20wait%20to%20try%20her%20Lover's%20Coffee%20Cake%20recipe%20to%20take%20advantage%20of%20the%20fresh%20cherries%20grown%20here,%20it%20did%20not%20disappoint.%3C/p%3E%3Cp%3ELover's%20Coffee%20Cake%3C/p%3E%3Cp%3EStreusel%3C/p%3E%3Cp%3E1)%20%20Preheat%20the%20oven%20to%20350%20degrees%20F.%20%20Liberally%20grease%20a%2010-inch%20tube%20pan%20with%20non-stick%20spray.%3C/p%3E%3Cp%3E2)%20%20Make%20the%20streusel:%20%20Combine%20the%20brown%20sugar,%20almonds,%20flour,%20cinnamon,%20and%20butter%20in%20a%20large%20bowl.%20Mix%20thoroughly%20and%20set%20aside.%3C/p%3E%3Cp%3E3)%20%20Make%20the%20cake:%20%20Sift%20together%20the%20flour,%20baking%20powder,%20and%20baking%20soda.%20%20Set%20aside.%20%20In%20the%20bowl%20of%20an%20electric%20mixer%20fitted%20with%20the%20paddle%20attachment,%20cream%20the%20butter%20and%20sugars%20on%20medium%20speed%20for%202%20minutes,%20until%20light%20and%20fluffy.%20%20With%20the%20mixer%20on%20low,%20add%20in%20the%20eggs%20and%20extracts%20and%20mix%20until%20combined.%20%20Scrape%20down%20the%20bowl.%20%20Add%20in%20half%20of%20the%20dry%20ingredients%20followed%20by%20half%20of%20the%20sour%20cream.%20%20Mix%20well%20on%20low%20speed.%20Repeat%20with%20remaining%20dry%20ingredients%20and%20sour%20cream.%3C/p%3E%3Cp%3ESpread%20half%20of%20the%20batter%20into%20the%20prepared%20pan.%20%20Arrange%20the%20cherries%20evenly%20over%20the%20batter.%20%20Sprinkle%20with%20half%20of%20the%20streusel.%20%20Top%20with%20the%20remaining%20batter%20followed%20by%20the%20streusel.%3C/p%3E%3Cp%3EBake%20for%2045%20to%2050%20minutes%20or%20until%20toothpick%20inserted%20in%20center%20comes%20out%20clean.%20%20Let%20cool%20completely%20in%20pan%20before%20inverting%20cake.%20%20Place%20right-side%20up%20onto%20serving%20plate.%20%20Garnish%20with%20powdered%20sugar.%3C/p%3E%3Cp%3E*The%20only%20changes%20to%20the%20recipe%20I%20made%20were;%20used%20light%20brown%20sugar%20(didn't%20have%20dark%20on%20hand),%20creamed%20butter%20and%20sugar%20and%20then%20added%20rest%20of%20the%20ingredients%20at%20once%20(what%20can%20I%20say,%20except%20I'm%20lazy),%20and%20I%20used%20a%20bundt%20pan%20since%20I%20don't%20own%20a%20tube%20pan%20(I%20know,%20I'm%20equally%20ashamed%20of%20myself)%20which%20was%20inverted%20after%20only%2010%20minutes,%20because%20bundt%20pans%20are%20notorious%20for%20sticking.%20%20The%20cake%20was%20quite%20popular%20around%20here%20and%20consumed%20in%20record%20time,%20so%20it%20will%20get%20baked%20again%20for%20sure.%3C/p%3E%3Cp%3ECan%20we%20be%20friends%20again%20now?%20%20Pretty%20please,%20with%20cherry%20streusel%20coffee%20cake%20on%20top.%3C/p%3E%3Cp%3EGina%3C/p%3E){kind=link}
