- Chop lobster meat into 1 inch pcs and set aside. Saute/fry onions and carrots in butter till tender. Add in the lobster and cook till lobster is glazed but not brown. Heat brandy. Pour over lobster and set aflame. Stir till flame dies. Blend in seasonings, lemon juice, and cream. Stir till thickened. Serve over rice or possibly linguine.
