- Heat butter; add in flour, lowfat milk and egg yolk. Cook till slightly thickened. Season with salt and pepper and add in lobster meat and lemon juice. Cold. Shape into cutlets, roll in bread or possibly cracker crumbs, beaten egg, crumbs again, and fry in deep fat till golden brown. Serves 6.
