- Place liver in large bowl, and cover with boiling water, let stand 5 min. Remove liver from water and remove membrane from meat, rinse and pat dry with paper towels. Sprinkle liver with salt and pepper and roll in flour. In large skillet, heat butter and saute/fry onions to desired degree of doneness. Remove and keep hot. Add in oil and fry liver till golden crust forms on both sides. To serve, place liver on platter and cover with onions.
