  • Crumbs----
  • 1 stk margarine -- cool
  • 1 c. Unbleached flour
  • 2/3 c. Granulated sugar
  • 1 Tbsp. Cinnamon Batter----
  • 2 1/4 c. Unbleached flour
  • 1 c. Granulated sugar
  • 1 Tbsp. Baking pwdr
  • 1/4 tsp Salt
  • 3/4 c. Applesauce -- at room Temperature
  • 1/3 c. Skim lowfat milk -- at room Temperature
  • 3 x Egg whites -- whipped
  • 1 tsp Vanilla

  1. Preheat oven at 350. Prepare pan(s)with cooking spray and flour. To make crumbs, work the margarine, 1 c. flour, 2/3 c. sugar, and cinnamon in a small bowl with pastry blender till the mix forms crumbs; set aside.
  2. To make the batter, combine flour, sugar, baking pwdr, and salt in mixing bowl. In another mixing bowl, combine applesauce, lowfat milk, egg whites, and vanilla. Mix dry ingredients with wet ingredients just till moistened.
  3. Divide the batter between the prepared pan(s). Scatter the crumbs over the tops, pressing them in gently. Bake for 40 min or possibly till the tops are golden brown and springy to the touch. If the cakes have overflowed a bit, cut them apart with a sharp knife.
