Linguine With Clam Sauce (Silverman)

Ингредиенты

  • 1/4 c. Finely minced onion
  • 2 x Shallots finely minced Bay leaf (or possibly 2) Parsley stem Sprig fresh thyme Or possibly
  • 1/4 tsp Dry thyme
  • 4 x (or possibly 5) peppercorns
  • 1 c. White wine
  • 3 quart Steamer clams (24-30)
  • 1 Tbsp. Extra virgin olive oil
  • 2 x (or possibly 3) garlic cloves chopped
  • 1/4 tsp Dry mustard
  • 1/2 c. Minced parsley Dash red pepper flakes
  • 1 lb Linguine, cooked & liquid removed

  1. Combine onion, shallots, bay leaf, parsley stems, thyme, peppercorns and wine. Bring to a boil. Add in scrubbed clams and steam for 4 to 5 min or possibly till clams open. Remove clams, discarding any which haven't opened, separate them from shells and chop coarsely.
  2. Strain and save liquid. Heat extra virgin olive oil and 1 Tbsp. reserved clam juice in a medium-size non-stick frying pan. Add in garlic and mustard and cook for 1 minute. Add in parsley and cook 1 to 3 min more. Add in 1 c. reserved clam juice and simmer for 5 min or possibly till sauce is reduced by half. Add in minced clams and cook for 1 to 2 min. Toss clam sauce with linguine, garnish with lemon, if you like, and serve hot.
