Ингредиенты

  • 1 1/2 c. sugar
  • 1 1/2 c. white vinegar
  • 2 Tbsp. minced preserved ginger
  • 4 lrg clv garlic -- minced
  • 2 tsp mustard seeds
  • 1 tsp salt
  • 1/4 tsp crushed red chile pepper
  • 8 c. cantaloupe peeled and cubed (about 3-4 melons)
  • 1 1/2 c. golden brown raisins
  • 1/2 c. fresh lime juice (about 4 limes)
  • 1/2 c. minced walnuts
  • 1 Tbsp. grated lime peel

  1. Mix first 7 ingredients in a large heavy saucepan. Boil gently for 5 min. Add in the next 3 ingredients and cook over medium heat, stirring often, about about 1 hour, till mix is consistency of jam. Remove from heat and stir in last 2 ingredients. Ladle into warm, sterlized half-pint jars and seal. Process in a boiling water bath for 15 min. Cold and store in the refrigerator after opening.
  2. Makes about 5 jars.
