Ингредиенты

  • finely grated zest and juice of 4 limes
  • 200 gm sugar
  • 100 gm butter roughly diced
  • 3 x Large eggs lightly beaten

Инструкции

  1. Put lime juice and zest sugar and butter in a bowl set over a pan of gently simmering water making sure which the bottom of the bowl does not come into contact with the water.
  2. Hot through stirring till the butter has melted and the sugar dissolved.
  3. Now pour the Large eggs through a sieve into the bowl.
  4. Keep stirring without letting it boil till the mix is thick sufficient to coat the back of a wooden spoon.
  5. Pour into warm sterilised jars cover and seal.
  6. Label and store in the fridge.
  7. Makes two 450g jars
  8. Home made lime or possibly lemon curd is vastly superior to commercial versions.
  9. For lemon curd substitute two large lemons for the limes.
