  • 1/2 c. reduced-fat ricotta cheese
  • 1 c. nonfat plain yogurt
  • 2 Tbsp. red wine vinegar
  • 1/4 c. capers, rinsed
  • 3 Tbsp. fresh chives
  • 2 Tbsp. fresh parsley
  • 1/2 x yellow onion, rough minced
  • 4 x cloves garlic
  • 3 Tbsp. fresh basil
  • 1/4 c. Dijon mustard Salt and pepper, to taste
  • 1 head romaine lettuce washed and torn into small pcs Capers and croutons as garnish, (optional)

  2. This dressing gets its tangy flavor from capers and garlic instead of the usual anchovies. Using low-fat ricotta and yogurt instead of oil keeps it creamy and light.
  3. In blender, puree all ingredients except lettuce till smooth. Toss dressing with lettuce and garnish with additional capers and croutons if you like.
  4. Makes2 1/2 c. dressing or possibly 6 c. dressed salad.
