Rawfully Tempting™: "Licorice Candy" Wheels

Black licorice has always been a love of mine, and while sucking on licorice root is pleasant, nothing has come close to the CHEWY texture of black licorice candy. Here's my first attempt at raw "licorice" wheels. They're still in the dehydrator,and should get a bit darker and firmer than pictures. Chewy, delicious, and enough "licorice" flavor from the star-anise lingers that lingers nicely on your tongue.

Star anise is the fruit of a tropical Asian tree. Chinese star anise, (not Japanese -it's toxic) used as a flavoring spice is also used medicinally in Asian cultures. The essential oils and/or ground powder can be made into a medicinal tea. Star anise contains ingredients that are said to have anti-bacterial and anti-fungal properties. It's also been used for whooping cough, menopause, rheumatism and more. Me? I'm just happy that it tastes and smells a lot like licorice!

"Licorice Candy" Wheels

Ingredients:

Directions:

Grind anise seed in nut/seed grinder.

In blender, mix ingredients. Taste for sweetness. ( didn't use raisins and the color was a bit lighter than I'd have liked).

Spread on non-stick dehydrator tray. (Offset spatula works great).

Dehydrate at 115 degrees F for 6 hours or until you can flip over and peel off non-stick sheet.

Dehydrate another hours, or until candy is no longer sticky.

Assembly

Roll edge over 1/8" pressing down. Roll again. Using a sharp knife, slice and roll into small wheels.

Dehydrate 4-6 hours until firm. Store in airtight container for up to 2 weeks.
