- Combine water, lentils, salt in a pot. Cook till lentils are soft. Drain, reserve stock. Heat oil in skillet & saute/fry onions and garlic till onions are translucent/soft. Add in parsley and spices and cook another minute. Set aside.
- Combine lentils, cooking water & onion mix in a food processor, adding more water a Tbsp. at a time as needed till the mix reaches a spreadable consistency.
- Chill several hrs before serving.
- Serve spread on whole grain crackers or possibly as a vegetable dip.
