%20and%20literally%20LOADS%20of%20zest.%3C/p%3E%3Cp%3EPerfect%20because%20a%20friend%20had%20brought%20me%20some%20lemons%20direct%20from%20California%20(via%20her%20sister)%20that%20were%20the%20size%20of%20softballs.%20%20I%20kid%20you%20not...friends%20didn't%20believe%20me%20an%20I%20have%20the%20pics%20to%20prove%20their%20relative%20size.%3C/p%3E%3Cp%3EAnyway,%20one%20of%20these%20lemons%20was%20sufficient%20for%20the%20juice,%20and%20then%20some,%20but%20I%20had%20to%20top%20up%20the%20zest%20with%20my%20frozen%20stash.%20Any%20time%20you%20find%20a%20sale%20on%20lemons%20or%20limes,%20zest%20and%20juice%20them%20then%20freeze%20both%20the%20zest%20and%20the%20juice.%20%20I'm%20always%20glad%20I%20do%20this%20because%20I%20never%20seem%20to%20run%20out%20of%20the%20%22fresh.%22%20%20It's%20always%20best.%3C/p%3E%3Cp%3EI%20used%20to%20pooh%20pooh%20about%20getting%20a%20Microplane%20to%20zest%20lemons%20and%20limes,%20then%20I%20finally%20took%20the%20plunge%20and%20treated%20myself%20to%20one.%20%20Folks,%20NO%20MESS%20at%20all%20like%20when%20using%20a%20box%20grater.%20%20As%20long%20as%20you%20have%20the%20%22channel%22%20facing%20you%20and%20the%20fruit%20underneath,%20all%20your%20zest%20collects%20*in*%20the%20channel%20neatly.%20Treat%20yourself%20to%20one.%20%20You%20will%20NEVER%20be%20sorry!!!%3C/p%3E%3Cp%3ELemonade%20%22Brownies%22%3C/p%3E%3Cp%3ENOTE:%20%20I%20used%204%20egg%20whites%20in%20this%20since%20I%20had%20them%20left%20over%20from%20another%20project,%20but%202%20whole%20eggs%20will%20work%20just%20fine.%20%20Also%20if%20you%20use%20*salted*%20butter,%20omit%20the%201/4%20tsp%20salt.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20%20Spray%20or%20grease%20a%208%20x%208%20inch%20baking%20pan.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20cream%20butter%20and%20sugar%20with%20electric%20mixer%20until%20light%20and%20fluffy.%20%20Add%20the%20eggs,%20and%20beat%20well.%20%20Add%20the%20salt,%20lemon%20juice%20and%20lemon%20zest%20and%20stir%20till%20mixed.%20%20Add%20the%20flour%20and%20beat%20until%20well%20combined.%20%20The%20batter%20will%20look%20curdled.%20%20This%20is%20OK.%3C/p%3E%3Cp%3EPour%20batter%20into%20prepared%20pan%20and%20bake%20for%2020-25%20minutes%20or%20until%20center%20is%20set.%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20cool%20completely.%3C/p%3E%3Cp%3EPrepare%20glaze%20by%20sifting%20the%20confectioners%20sugar%20into%20a%20bowl%20and%20adding%20the%20remaining%20ingredients.%20%20Stir%20until%20smooth.%3C/p%3E%3Cp%3EPour%20half%20of%20the%20glaze%20over%20completely%20cooled%20brownies.%20%20Spread%20glaze%20to%20coat%20the%20entire%20top.%20%20Glaze%20will%20NOT%20harden.%3C/p%3E%3Cp%3EReserve%20remaining%20glaze%20for%20spooning%20over%20individual%20portions%20or%20store%20in%20an%20air-tight%20container%20for%20another%20use.%3C/p%3E%3Cp%3EMakes%209%20servings.%3C/p%3E%3Cp%3ELemonade%20Brownies%3C/p%3E){kind=link}
