This Lemon Pepper Chicken recipe is flavorful on the outside and tender and juicy on the inside. Lemon Pepper Chicken   Save Print Prep time Cook time Total time   Author: Marlene Baird Serves: 6 Ingredients 1 pound chicken breasts, cut into 1 inch pieces 2 Tablespoons olive oil divided ½ teaspoon black pepper 1 shallot, finely chopped 1 Tablespoon lemon juice 1 teaspoon lemon zest 1 teaspoon fresh rosemary, chopped ½ cup Sherry 1 Tablespoon flat leaf parsley, chopped 1 cup uncooked orzo (or zoodles, linguini or rice) Directions Cook orzo according to package directions, Drain. Transfer orzo in a medium bowl; cover and keep warm. While orzo cooks, in a bowl large enough to toss the chicken, add oil and pepper. Whisk together. Add the chicken pieces to the bowl and toss to coat the chicken pieces. Let the coated chicken rest in the refrigerator for at least 15 minutes or more. Heat the olive oil in a large skillet over medium heat. Saute the shallots until they are translucent. Add the chicken and sauté for 6 to 8 minutes, turning the pieces about every 2 minutes or until browned and then add the rosemary, lemon zest and lemon juice. Once the chicken bites have browned on at least 2 sides, add the sherry to deglaze the pan. Continue to stir until the sauce thickens and coats the chicken. Some of you already know that my daughter finally wants to learn t o cook,  I say finally, because she is in her 20’s and always claimed she was too busy to learn.  This Lemon Pepper Chicken with Orzo was made by her.  It is a recipe I selected, with her approval, of course. She learned about ‘mise en place’, along with a few tips on chopping shallots, and parsley. The boyfriend had seconds and the hubby devoured his portion as well.  Luckily, she had just enough to take to work the next day and have it for lunch. Our decision to make a lemon dish was easy.  With the incredible scent of fresh cut lemons wafting though the kitchen, I knew these lemons were first rate. The hubby walked into the kitchen and announced “Something smells good.  What are you making?”  I stated that I wasn’t making anything.  The smell was just from freshly cut lemons. Yes, they smell that good. Now you don’t need to make a recipe to enjoy lemons. Drink fresh squeezed lemon juice with a glass of water to start out your day. Lemons, detox, rejuvenates skin, assists in weight loss, freshens your breath, strengthens the immune system, removes toxins for the body and will even reduce bloating. Go get your lemon on.
