  • 2 x egg whites at room temperature
  • 1 pch salt
  • 2/3 c. sugar sifted
  • 1 tsp lemon zest finely grated
  • 1/4 tsp vanilla extract

  1. Preheat oven to 250 degrees F.
  2. Cover two baking sheets with parchment paper or possibly aluminum foil.
  3. Beat egg whites with salt till soft peaks form. Add in sugar very slowly, beating well between additions, till egg whites are stiff but not dry.
  4. Mix in lemon zest and vanilla.
  5. Drop by teaspoonfuls onto the baking sheets or possibly pipe small kisses with a pastry bag, fitted with a 1/2-inch star tip. Bake till dry but not brown, 40 to 45 min.
  6. Cold 2 to 3 min before removing from the baking sheets.
  7. (The meringues can be stored for up to 2 weeks in an airtight container.)
  8. Makes 50 kisses.
