%3C/p%3E%3Cp%3EAs%20I%20was%20reading%20through%20my%20friends'%20blogs%20on%20FoodBuzz,%20I%20discovered%20a%20link%20to%20a%20monthly%20cupcake%20challenge!%20The%20Sweetest%20Kitchen%20hosts%20a%20monthly%20Mystery%20Box%20Cupcake%20Challenge%20and%20February's%20ingredient%20is%20chocolate%20cake.%20I%20found%20Jamieanne's%20challenge%20just%20in%20time%20to%20create%20a%20cupcake,%20but%20not%20enter%20it%20into%20the%20competition.%20But%20I'll%20share%20anyway.%20:)%3C/p%3E%3Cp%3EChocolate%20Pistachios%3C/p%3E%3Cp%3EHonestly,%20I'm%20blanking%20on%20what%20(or%20rather,%20how%20much%20of%20the%20stuff)%20I%20put%20into%20these%20cupcakes.%20:)%20These%20cupcakes%20are%20definitely%20my%20own%20creation,%20and%20are%20probably%20something%20I'll%20continue%20to%20tweak%20until%20I%20get%20it%20juuuuuuuuuuuust%20right.%3C/p%3E%3Cp%3EHere%20is%20my%20partner-in-crime%20in%20the%20kitchen.%3C/p%3E%3Cp%3EHere%20is%20what%20Kyleigh%20is%20working%20on%20in%20the%20above%20picture.%20Into%20the%20mixing%20bowl%20went%20all-purpose%20flour,%20unsweetened%20cocoa%20powder,%20salt,%20baking%20powder,%20and%20baking%20soda.%3C/p%3E%3Cp%3EInto%20the%20bowl%20for%20the%20stand%20mixer%20went%20butter,%20granulated%20sugar,%20and%202%20large%20eggs.%3C/p%3E%3Cp%3EI%20added%20the%20flour%20mixture%20alternately%20with%20buttermilk;%20begin%20and%20end%20with%20the%20flour%20mixture.%20Mmmm,%20don't%20you%20want%20to%20just%20dive%20right%20in?%20Forget%20baking,%20just%20hand%20me%20a%20spoon!%3C/p%3E%3Cp%3EI've%20had%20these%20Reynold's%20Foil%20Cups%20sitting%20in%20my%20baking%20cupboard%20waiting%20for%20just%20the%20right%20filling.%20I%20decided%20this%20is%20it.%20So%20here%20is%20the%20batter%20in%20the%20muffin%20pan%20in%20the%20oven.%3C/p%3E%3Cp%3EAfter%20baking%20at%20350%20degrees%20F%20for%20about%2015%20minutes,%20here%20they%20are!%20Ready%20and%20waiting%20to%20be%20frosted.%3C/p%3E%3Cp%3EWhile%20the%20cupcakes%20were%20cooling,%20I%20had%20a%20dilemma.%20What%20should%20top%20these%20chocolate%20cakes?%20I%20had%20a%20few%20ideas%20in%20mind,%20but%20I%20couldn't%20decide%20on%20which%20one.%20So%20I%20tried%20calling%20my%20list%20of%20sounding-board%20people%20but%20to%20no%20avail.%20I%20was%20left%20to%20my%20own%20devices.%3C/p%3E%3Cp%3EI%20actually%20didn't%20go%20with%20any%20of%20my%20awesome%20ideas.%20:)%20I%20went%20in%20a%20different%20direction%20entirely%20because%20I%20didn't%20have%20everything%20I%20needed%20for%20any%20one%20of%20my%20crazy%20concoctions.%20While%20I%20was%20looking%20in%20my%20pantry%20for%20inspiration,%20I%20found%20it!%20Pistachio%20pudding%20mix!%20The%20hubs%20like%20pistachio%20so%20I%20guess%20you%20could%20say%20I%20did%20this%20for%20him.%20I%20started%20with%20a%20buttercream%20icing%20base,%20added%20the%20pudding%20mix,%20and%20made%20the%20needed%20adjustments.%3C/p%3E%3Cp%3EAfter%20tasting,%20I%20just%20wasn't%20happy%20with%20it.%20I%20added%202%201/2%20Tbsp%20of%20lime%20juice%20as%20well%20as%201/4%20tsp%20lemon%20extract.%20That%20sealed%20the%20deal!%3C/p%3E%3Cp%3EIt%20was%20time%20to%20ice%20the%20cupcakes.%20Don't%20they%20look%20cute?%20:)%3C/p%3E){kind=link}
