I love it when I get my King Flour Company Baking Sheet in the mail! I always know that there will be a new, awesome recipe to try, and the Early Spring, 2012 was no exception. I made these for a ladie’s luncheon that I was invited to. The event was cancelled at the last minute, so what to do with all the cookies?? I took them to a local restaurant that our friend’s own and set them out for the staff. They. Loved. Them. We happened to be getting a bunch of snow that night, and these super springy cookies put a little gleam in everyone’s eyes…
Lemon Cookies
Yield: about 40 cookies
I got the cute little lemon candies from the King Flour Company catalog!
Ingredients:
- 3 1/4 cups flour
- 1 talbespoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 1/4 cup unsalted butter
- 1/4 cup vegetable shortening
- 3 large eggs
- 1/2 teaspoon vanilla extract
- 1/4 cup milk
- 1 teaspoon lemon zest
- 1/4 cup fresh lemon juice
- GLAZE:
- 2 cups powdered sugar
- 3 tablespoons fresh lemon juice
- 2 tablespoons soft butter
- 1 teaspoon lemon zest
Directions:
Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper.
For the cookies: Whisk together the flour, baking powder and salt; set aside. In a large mixing bowl, beat the sugar, butter and shortening together until light. Beat in the eggs, one at a time. Scrape the bowl, mix for another 30 seconds, then add 1 cup of the flour mixture and mix to combine. Add the vanilla, milk, lemon zest and juice, then remaining flour mixture. Mix until smooth, scraping the bowl once during the process.
Scoop by the tablespoon ibto the prepared baking sheet and bake for 10 minutes, until the edges are barely light golden brown. Remove from the oven and cool on a rack bvefore frosting.
For the Glaze: Sift the sugar into a medium bowl; add the lemon juice, butter, and zest and whisk until smooth. Brush the glaze on top of the cooled cookies.
