Lemon Chicken Soup

I spent some time trying to make a chicken lemon soup that tasted similar to one from my favorite restaurants that I think you can figure out on your own.

Ингредиенты

  • 2 tbls olive oil, divided
  • 1 lbs boneless, skinless chicken thighs, 1" chunks
  • Salt, pepper to taste
  • 3 cloves of garlic, minced
  • 1 onion, diced
  • 3 carrots, peeled, diced
  • 2 celery stalks, diced
  • 1/2 tsb dried thyme
  • 5 cups chicken stock
  • 2 bay leaves
  • 3/4 cups uncooked orzo
  • 1 sprig rosemary
  • juice of 3-5 lemons (it depends on how lemony you like it)
  • 2 tbls fresh parsley leaves

Инструкции

  1. Hear 1 tbls of olive oil in a Dutch Oven over medium heat.
  2. Season thighs w/salt, pepper to taste. Add to pot and cook till golden. 3-5 minutes per side. Set aside.
  3. Add remaining oil. Add garlic, onion, carrots and celery. Cook until tender.
  4. Stir in thyme until fragrant. About 1 minute.
  5. Whisk in chicken stock and 1 cup of water. Bring to a boil.
  6. Stir in orzo, rosemary, chicken. Reduce heat, simmer until orzo is tender. 10-12 minutes.
  7. Stir in Lemon juice. Salt to taste. Pick ou rosemary stems. Serve.
