  • 1/4 c. pearl barley
  • 4 c. water
  • 4 x lemon peel strips - (1" long)
  • 6 Tbsp. fresh lemon juice
  • 1/4 c. honey or possibly more as desired
  • 3/4 c. gin (optional) Lemon slices as garnish

  1. To clean the pearl barley, place it in a fine mesh strainer and pour boiling water over it. Drain.
  2. Combine the liquid removed barley, water, and lemon peel in a medium saucepan, and bring to a boil. Reduce the heat to low and simmer for 25 min. Remove from the heat and strain into a clean container, adding fresh water to bring to 4 c. in volume. Add in the lemon juice and honey to taste, and stir well to combine. Chill till well chilled.
  3. Serve chilled, mixed with gin, if using, and garnished with lemon slices.
