I hope everyone had an amazing Thanksgiving! I’m still trying to get myself off the couch and onto my treadmill. I’m completely stuffed. Skinny is so overrated right? I just keep telling myself that. If you’re like me and have turkey leftover and are wondering what to do with it, we have some great ideas for you from Executive Chef Russell Skall from Fleming’s Prime Steakhouse & Wine Bar.

Fleming’s hosted their very first Thanksgiving for the first time ever with a four-course menu, including traditional favorites like a mixed herb roasted turkey breast with savory gravy yesterday. With lots of turkey leftovers on-hand, Chef Russell has prepared recipes for Turkey Fried Rice, Turkey Quesadillas and Turkey Crepes.

Additionally, on Thanksgiving weekend (Friday-Saturday), Fleming’s will also offer all wine on the Fleming’s 100 wine list at $10 per glass so get yourself over to your nearest Fleming’s and take advantage. Reservations are highly encouraged and you can do that here .

What To Do:

Place a large cast iron pan on medium heat.

Prepare all of the ingredients prior to cooking

Spray both sides of the tortillas with Pam. Cook on 1 side until lightly brown about 1 ½ minutes then flip over Immediately sprinkle 1/2 oz. of each cheese on tortilla (avoid letting cheese hit the pan)

Divide the remaining ingredients into 4 portions then arrange all ingredients equally on the tortillas.

Top with cilantro leaves and remaining cheese then fold the tortilla in half. Once golden brown transfer to a cutting board

Repeat with remaining tortilla and ingredients. Cut each quesadilla into 4-5 pie shaped pieces.

Serve with your favorite guacamole, sour cream and salsa.
