INGREDIENTS

(Serves 2)

PREPARATION METHOD

Soak the cooked rice in 4 cups of water overnight (no need to refrigerate).

Next morning take the watery soaked rice and smash it well with your hands.

Add curd , salt and mix well and set aside.

Remove the skin and chop onions and garlic into smaller pieces.

Take half of the chopped onions and set it aside separately for garnishing

Now for tempering this kanji, in a pan add oil. After it heats up add mustard seeds and let it splutter.

Now add chopped onions, chopped garlic, and saute until they turn slightly brownish.

Remove from flame and add it to the prepared porridge.

Stir well.

Now add chopped ginger and coriander leaves and stir well.

Finally add the saved chopped onions.

Drop in a piece of pickle and Serve!!

TIP 1: If you are going to use fresh cooked rice then add 2 cups of water to the boiled fresh rice and smash it well and follow the same procedure.

TIP 2: Do not blend the rice, just smash it. Blending will not suit the recipe.

TIP 3: Add curry leaves for extra aroma.

TIP 4: Add only thick and non-sour curd.

Delicious Leftover Rice Porridge (2) / Kanji is now ready!! Serve plain or with pickles or Papads!!
