- In a lidded frying pan, saute/fry the leeks in the butter till wilted. Add in vinegar, salt and pepper; cover and cook on low heat till leeks are tender
- (about 30 min). Remove lid and increase heat to moderately high; add in cream and cook, stirring, till cream is absorbed (about 1 minute). Remove pan from heat and cold slightly.
- Spread the goat cheese proportionately over the bottom of the tart shell. Spoon the leek mix proportionately over the cheese. Bake in a 350 degree F. oven till heated through and browned on top (about 15 min).
