Layer Cake With Whipped Cream

Ингредиенты

  • 5 x Large eggs
  • 150 gm Sugar
  • 100 gm Sifted flour
  • 50 gm Potato starch
  • 1/2 x Lemon, grated zest of
  • 1 tsp Vanilla
  • 1/2 tsp Baking pwdr
  • 8 dl Whipping cream
  • 30 gm Confectioner's sugar
  • 5 gm Vanilla
  • 150 gm Jam of your choice (I usually use strawberry)
  • 1 x Bananas, sliced (up to 2)

Инструкции

  1. Sponge:1. Mix Large eggs and sugar till stiff and fluffy.
  2. Add in rest of ingredients and carefully blend together. Try not to beat the air out of the Large eggs.
  3. Pour into a spring form
  4. Bake at 160*c for 35-40 min.
  5. Cold on rack.
  6. Rest:1. Whip the cream with confectioners sugar and vanilla.
  7. Slice the sponge cake into 3 layers. (horizontally)
  8. Spread a thin layer of jam on the bottom layer.
  9. Cover the jam with bananas.
  10. Spread 1\4 of the cream on the bananas.
  11. Put the second layer of sponge cake on top.
  12. Repeat the first layer.
  13. Put the last later of sponge cake on top.
  14. Cover the cake with rest of the whipped cream.
  15. 10 Garnish with fresh fruit.
  16. you can use any kind \ several fruit instead of the bananas. It taste great if you use minced walnuts in-between the layers
