%3C/p%3E%3Cp%3ELetter%20L%20was%20a%20little%20tough%20for%20me.%20I%20couldn't%20think%20of%20any%20fruits%20or%20veggies%20that%20start%20with%20the%20letter%20L.%20But%20the%20word%20Laddoo%20got%20stuck%20in%20my%20head.%20I%20was%20trying%20to%20find%20a%20laddoo%20that%20was%20made%20in%20A.P,%20but%20the%20one%20I%20knew%20that%20is%20from%20Andhra,%20Thokkudu%20Laddoo,%20I%20have%20already%20blogged%20about%20it.%3C/p%3E%3Cp%3EFinally%20I%20remembered%20Lauju/%20Laskora%20that%20my%20mom%20used%20to%20make.%20This%20is%20basically%20coconut%20burfi,%20just%20with%20a%20different%20name.%20Whenever%20I%20buy%20coconuts,%20they%20end%20up%20being%20too%20tough,%20but%20this%20time%20for%20a%20change%20I%20got%20a%20coconut%20that%20was%20just%20right.%20So%20I%20decided%20to%20make%20this%20traditional%20sweet%20with%20it.%3C/p%3E%3Cp%3EGrating%20the%20coconut%20would%20have%20given%20the%20burfi%20a%20better%20look,%20but%20with%20my%20little%20toddler%20right%20at%20my%20leg,%20I%20couldn't%20grate%20it%20and%20took%20the%20easy%20way%20out.%20I%20put%20the%20coconut%20in%20the%20food%20processor%20and%20just%20ground%20it.%3C/p%3E%3Cp%3EAddition%20of%20saffron%20is%20optional,%20but%20I%20thought%20coconut%20and%20saffron%20combination%20to%20be%20very%20pleasing%20and%20tasty.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ELightly%20grease%20a%20plate%20or%20any%20other%20container%20with%20ghee%20and%20set%20aside.%3C/p%3E%3Cp%3EMelt%20ghee%20in%20a%20heavy%20bottom%20pan;%20add%20grated%20coconut%20and%20saute%20for%204-5%20minutes%20on%20medium%20flame%20until%20very%20lightly%20browned%20and%20fragrant.%20Remove%20from%20the%20pan%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20the%20same%20pan,%20combine%20sugar%20and%20%C2%BD%20cup%20of%20water.%20Bring%20this%20mixture%20to%20a%20boil%20on%20medium-high%20flame.%3C/p%3E%3Cp%3EReduce%20the%20flame%20to%20medium%20and%20add%20the%20coconut.%20Mix%20well%20and%20keep%20stirring%20frequently.%20The%20mixture%20will%20be%20very%20frothy%20and%20bubbling%20in%20the%20beginning.%20Add%20saffron%20and%20ground%20cardamom%20and%20mix%20well.%3C/p%3E%3Cp%3EContinue%20cooking%20until%20the%20mixture%20starts%20to%20thicken%20and%20slowly%20starts%20to%20leave%20the%20sides%20of%20the%20pan.%20This%20is%20the%20most%20crucial%20stage,%20once%20you%20see%20that%20the%20mixture%20is%20no%20longer%20sticking%20to%20the%20pan,%20then%20pour%20it%20into%20the%20prepared%20plate%20and%20smooth%20out%20the%20top.%20Let%20cool%20slightly%20before%20scoring%20it%20into%20either%20squares%20or%20diamonds.%3C/p%3E%3Cp%3EIf%20you%20let%20the%20coconut-sugar%20mixture%20cook%20too%20long%20then%20it%20will%20no%20longer%20be%20pourable.%20The%20entire%20mass%20will%20become%20crumbly%20and%20look%20like%20toasted%20coconut.%20In%20that%20case,%20add%20a%20splash%20of%20milk%20and%20let%20the%20sugar%20melt%20again%20and%20this%20time%20make%20sure%20that%20you%20take%20it%20off%20at%20the%20right%20time%20:-)%3C/p%3E%3Cp%3EK%20for%20Kakarakaya%20Podi%20Kura%3C/p%3E){kind=link}
