%20was%20possibly%20an%20ace%20for%20Chef%20Tanveer.%20This%20was%20the%20dish%20I%20call%20the%20%E2%80%98hook%E2%80%99%20%E2%80%93%20the%20moment%20you%20know%20this%20meal%20is%20going%20to%20be%20fabulous!%20Apart%20from%20the%20expected%20freshness%20and%20balance,%20the%20key%20to%20this%20dish%20was%20the%20choice%20of%20mayo%20Chef%20chose%20to%20use,%20Japanese%20Mayo%20or%20some%20say,%20Kewpie.%20Being%20thinner%20and%20tangier,%20there%20is%20a%20whole%20different%20bouquet%20of%20flavours%20to%20play%20with%20here%20and%20the%20consistency%20is%20perfect.%20Calm%20the%20palate%20with%20either%20the%20Charred%20Corn%20Tabbouleh%20with%20feta%20salad%20and%20falafel%20(INR%20550)%20or%20the%20Quinoa%20Roasted%20Pumpkin%20Salad%20with%20Pine%20Nuts%20and%20Goat%E2%80%99s%20Cheese%20(INR%20550),%20both%20of%20which%20do%20terrific%20justice%20to%20the%20vegetarian%20angle%20in%20this%20menu.%20The%20charred%20corn%20is%20smoky%20and%20Taboulleh%20is%20corn-sweet%20and%20light,%20while%20the%20Quinoa%20brings%20in%20a%20fluffiness%20with%20a%20perfect%20caramelized%20sweetness%20from%20roasted%20pumpkin.%20Don%E2%80%99t%20miss%20the%20Chard%20Bread%20with%20the%20salad.%20The%20nuttiness%20is%20all%20the%20texture%20you%20need%20to%20set%20off%20the%20pine%20nuts;%20it%E2%80%99s%20like%20drama%20you%20can%20taste!%20Then%20things%20continue%20to%20get%20exciting!%20The%20humble%20sounding%20Cabbage%20and%20Onion%20Salad%20with%20plum,%20avocado,%20seaweed%20and%20tanuki%20(INR%20550)%20ups%20the%20ante%20with%20the%20awesome%20Asian%20twist%20of%20Tanuki.%20These%20tempura%20crumbs%20are%20a%20perfect%20pick%20me%20up%20the%20for%20the%20limp%20but%20hugely%20flavourful%20seaweed%20and%20if%20you%E2%80%99re%20a%20meat%20eater%20gone%20vegetarian,%20this%20is%20going%20to%20bring%20back%20some%20amazing%20memories%20of%20the%20glory%20days!%20So%20many%20textures,%20onion%20crunch,%20buttery%20beans,%20soft%20avocado,%20moist%20seaweed,%20intelligent%20%E2%80%93%20Tanuki,%20it%20was%20very%20chirashi%20like,%20this%20salad!%3C/p%3E%3Cp%3EThe%20menu%20goes%20on%20to%20become%20a%20vegetarian%E2%80%99s%20delight%20with%20Harra%20Moth%20ki%20Chaat%20(INR%20550)%20and%20Dahi%20ka%20Cheela%20(INR%20550)%20but%20the%20real%20stars%20would%20have%20to%20be%20the%20Blow%20Torched%20Salmon%20with%20Wakame%20salad%20and%20pineapple%20wafu%20dressing%20(INR%20650)%20which%20tastes%20just%20as%20good%20as%20it%20sounds%20and%20has%20not%20a%20trace%20of%20propane%20to%20boot!%20Wafu%20is%20a%20Japanese%20vinaigrette%20of%20sesame%20oil,%20wasabi%20and%20Rice%20Vinegar.%20Add%20pineapple%20to%20that%20and%20you%20have%20the%20Japanese%20penchant%20for%20perfection%20at%20it%E2%80%99s%20best!%20The%20Salmon%20is%20served%20in%20rosettes,%20like%20a%20cousin%20of%20Sashimi,%20with%20a%20hint%20of%20green%20apple%20in%20case%20the%20pineapple%20isn%E2%80%99t%20tropical%20enough.%20The%20Chicken%20Oyster%20and%20Wild%20Mushroom%20Salad%20with%20wasabi%20aioli%20and%20tobiko%20(INR%20650)%20complements%20the%20Salmon%20very%20well.%20Fleshy%20mushrooms,%20rich%20with%20fish%20roe%20and%20nutty%20Roquette%20leaves%20to%20make%20it%20more%20earthy.%20Also%20the%20aioli%20is%20bottle%20worthy.%20It%20has%20everything%20to%20do%20with%20the%20combination%20of%20mushrooms,%20shimeji,%20king%20brown%20and%20shiitake,%20beautifully%20done!%3C/p%3E%3Cp%3EThe%20Okonomiyaki%3C/p%3E%3Cp%3EIf%20you%20wish%20to%20bring%20in%20a%20bit%20of%20red%20meat%20instead,%20there%20is%20the%20Warm%20Vietnamese%20Shaking%20Black%20Pepper%20Lamb%20Salad%20with%20lychee%20(INR%20650);%20hot%20and%20cold%20at%20play,%20soft%20lamb%20with%20Japanese%20flavours,%20a%20lick%20of%20spice%20and%20then%20the%20cooling%20lychees.%20You%20see%20how%20it%20works,%20almost%20like%20magic!%20Don%E2%80%99t%20leave%20the%20fun%20part%20in%20all%20this%20food%20and%20I%20don%E2%80%99t%20mean%20dessert!%20Do%20try%20the%20Okonomiyaki%20(cabbage%20and%20corn%20or%20prawn%20and%20bacon)%20(INR%20650).%20This%20super%20fun%20Japanese%20style%20savoury%20pancake%20looks%20like%20a%20pizza.%20It%20is%20flour%20based%20with%20a%20variety%20of%20ingredients%20in%20the%20batter,%20which%20is%20then%20poured%20on%20hot%20skillets%20or%20pan%20grilled%20to%20make%20wholesome%20mini%20meals.%20I%20chose%20the%20prawn%20and%20bacon,%20the%20combination%20of%20the%20sweet%20sea%20and%20the%20salty%20fat%20put%20this%20in%20my%20top%20three%20dishes%20of%20the%20day%20and%20those%20were%20some%20hard%20choices!%20Pair%20your%20meal%20with%20a%20variety%20of%20specially%20curated%20cocktails%20and%20mocktails,%20and%20enjoy!%3C/p%3E){kind=link}
