A couple of Sunday's ago I answered a phone call from my Daughter-in-Law Kristina. She asked me what I was doing and I told her I was just sitting around the house being lazy and had macaroni & cheese in the oven. She then proceeded to excitedly tell me that I had to come right over and try something she was making. I left Grumpy in charge of the mac & cheese and headed right over to see what Kristina had to share with me that she was so excited about.

Kristina's Apple Cheesecake Empanadas

Cheesecake Filling:

Directions:

Blend together Cheesecake filling and set aside. Cook apples with butter until soft. Stir in brown sugar and cook until sugar has dissolved. Cool slightly.

To assemble:

Place eggroll wrapper on empanada maker (if you don't have one of these you can cut eggroll wrapper into large circles and use a small amount of water when sealing), place approximately 2 tablespoons of filling on one side of wrapper and fold to cover filling. Deep fry in vegetable oil heated to 380 degrees until brown. Sprinkle with cinnamon sugar.

**Note: These cook quickly so keep a close eye on them while frying.
